Best Carbon Steel Pan: Mauviel, OXO, Lodge, Made In

The pan in most restaurant kitchens. It sears like cast iron, weighs less, answers the burner faster and, seasoned well, releases an egg.

The carbon steel pan, and who should choose it over cast iron

Carbon steel is iron with a little carbon, rolled into sheet and pressed into a pan, where cast iron is poured into a mold. The practical result is a pan with thinner walls and a smooth surface. It heats faster, cools faster when you turn the flame down, and weighs noticeably less than cast iron of the same size. It is why French kitchens have used black steel pans for omelets and crepes for generations, and why so many line cooks reach for one.

Like cast iron, it needs seasoning: a thin layer of oil baked onto the surface until it turns into a hard, slick, dark film. Unlike cast iron, the smooth steel takes that seasoning evenly, and a well-kept pan becomes very close to nonstick. It will also last as long as you do, with no coating to wear out.

The catch is that the pan earns its patina. A new, unseasoned carbon steel skillet is gray, sticky and prone to rust. Several below arrive pre-seasoned, which shortens the break-in; the best of them still ask for a few weeks of cooking before eggs slide.

How we chose

  1. Release once seasoned. How reliably food lets go after seasoning, weighted toward independent testing from America's Test Kitchen and Wirecutter.
  2. Thickness and flatness. Thick enough to hold heat for a sear and resist warping, thin enough to stay lighter than cast iron.
  3. Out of the box. Whether it comes pre-seasoned or waxed against rust, and how much work the first week asks.
  4. Handle and weight. Carbon steel handles are riveted steel and get hot. Angle and balance decide how easy the pan is to toss and lift.

OXO Obsidian 12" Carbon Steel Frying Pan, Pre-Seasoned Skillet

Best overallNo. 1

OXO Obsidian 12" Carbon Steel Frying Pan, Pre-Seasoned Skillet

OXO's Obsidian pan arrives pre-seasoned and ready to cook, with a removable silicone sleeve over the steel handle. It is light for its size, oven safe to 660 degrees Fahrenheit, works on induction and is safe for metal utensils. Wirecutter named it its top carbon steel pick for 2025, citing the nonstick-like ease, the light weight and the sear.

For a cook moving from nonstick, this is the gentlest introduction. The factory seasoning is good enough to fry an egg early on, and the patina builds from there with ordinary cooking.

Skip it if you prefer to season a pan from bare steel to your own standard; the Mauviel is the purer choice. Hand wash only.

The catch. Where it is made is not stated on the listing, and it costs more than the Lodge or Merten & Storck.

Lodge Carbon Steel Skillet with Handle Holder, 10 Inches

Silicone handle holder

Lodge makes its carbon steel skillets in the United States from heavy 12 gauge steel with riveted steel handles. The pan comes pre-seasoned with vegetable oil and works on any cooktop, including induction, and on a grill or campfire. A silicone handle holder is included, which matters, because the steel handle gets hot.

The 10 inch size is the one for eggs, a couple of chops or a skillet of potatoes for two. It is a low-risk way to find out whether you like cooking on carbon steel before spending more.

Temper expectations about the factory seasoning. America's Test Kitchen found that on Lodge's 12 inch carbon steel pan it wore away during early cooking, so food stuck. Plan to season it again yourself before relying on it for eggs.

The catch. The factory seasoning is thin; expect to build your own before it is truly slick.

Merten & Storck Pre-Seasoned Carbon Steel 12" Frying Pan Skillet

The inexpensive 12 inchNo. 3

Merten & Storck Pre-Seasoned Carbon Steel 12" Frying Pan Skillet

Our take. A full-size, pre-seasoned carbon steel skillet for about the price of a family dinner out.

Merten & Storck's 12 inch pan is pre-seasoned and ships with a protective silicone coating, so the instruction is simply to wash it and start cooking. It is oven safe to 600 degrees Fahrenheit, works on every cooktop including induction, and is rated safe for metal utensils. The handle is triple riveted.

Twelve inches is the useful size for a household of four: room for a whole chicken spatchcocked, a pan of fried rice or four steaks in rotation. It is lighter than a 12 inch cast iron skillet, which is most of the reason to own one.

Skip it if you want a pan that is slick from day one. Like any carbon steel, it gets better with use, and it must be hand washed.

The catch. Little published about where or how thick it is made; buy it on price and convenience.

Mauviel M'Steel Black Carbon Natural Nonstick Frying Pan With Iron Handle, 12.6-in

The French classic to season yourselfNo. 4

Mauviel has made cookware in Villedieu-les-Poêles, Normandy, since 1830, and M'Steel is its black steel line: extra thick carbon steel with a riveted iron handle. The pan ships coated in beeswax to keep it from rusting, which you wash off with very hot water before seasoning it yourself. It works on every cooktop, including induction.

America's Test Kitchen names it the best carbon steel skillet for most home cooks. Its testers found it quickly became reliably slick and released food perfectly, and judged it sturdy enough to last a lifetime. They also found it slightly heavier than ideal, at about 5 pounds.

Skip it if you want to cook tonight without a seasoning session, or if lifting 5 pounds by one steel handle is a strain. Mauviel's own instructions say to preheat slowly and cook at about 60 percent of the burner's power.

The catch. Arrives unseasoned and heavy for carbon steel; it asks for an afternoon before its first egg.

Made In Cookware 2 Piece Seasoned Carbon Steel Frying Pan (10", 12")

Made In's carbon steel pans are made in Sweden from blue carbon steel and arrive seasoned. The set pairs a 10 inch pan for eggs and small jobs with a 12 inch pan for searing. Made In rates them to 1,200 degrees Fahrenheit, which means the oven, the grill and an open fire are all fair game, and they work on induction.

The price is for two pans, so each works out to about $100, less than a single Mauviel. For a cook who already knows carbon steel suits them, owning both sizes means the right pan is always free.

Know one reservation. America's Test Kitchen found the surface of Made In's pre-seasoned pan pebbly and textured, and it did not release food as easily as its winner. It improves with seasoning, but it is not the slickest pan here on day one.

The catch. The textured factory seasoning releases less easily at first than a smooth, home-seasoned pan.

Compared.

Every comparison

Carbon steel or cast iron

Choose carbon steel if you cook eggs, fish and quick sautés, toss food in the pan, or find a 12 inch cast iron skillet too heavy to lift one-handed. It heats faster and responds sooner when you lower the flame.

Choose cast iron if you want a pan that holds a steady heat for a long time, for cornbread, deep searing of a thick steak or anything baked. Cast iron's mass is its virtue. Many cooks end up owning one of each.

Both dislike long simmers in acid. America's Test Kitchen notes that tomato sauce strips carbon steel's seasoning, though ten minutes of heating with oil on the stove restores it.

How to season one

Wash off any wax or protective coating with very hot water, dry the pan completely on the burner, and wipe on the thinnest possible film of neutral oil. Heat until it smokes and darkens, let it cool, and repeat three or four times. Then cook fatty things in it for the first few weeks: bacon, fried potatoes, shallow-fried cutlets.

The pan will turn blotchy brown, then black. That is correct.

Everyday care

Rinse with hot water and a brush while the pan is still warm; a little soap will not hurt a well-built seasoning. Dry it on the burner, wipe in a drop of oil, and put it away. Never the dishwasher, and never leave it to soak.

If it rusts, scrub the rust off with steel wool and season that spot again. Nothing about a carbon steel pan is ruined for good.

Frequently asked questions

Is carbon steel better than cast iron?

Different, not better. Carbon steel is lighter and heats faster; cast iron is heavier and holds heat longer. For eggs and quick cooking, carbon steel. For long, steady heat and baking, cast iron.

Is carbon steel nonstick?

Once well seasoned, close to it. It has no coating; the slickness is polymerized oil built up through seasoning and cooking.

Does carbon steel work on induction?

Yes. Carbon steel is magnetic, and every pan in this guide is rated for induction.

What about de Buyer?

De Buyer's Mineral B, the other great French black steel pan, is roomy and sturdy, though America's Test Kitchen found its high-angled handle harder to maneuver. On Amazon US it is currently offered only by third-party sellers, so we have not listed it.

Can I cook tomatoes in carbon steel?

Briefly, yes. A long simmer in acid will strip seasoning and can taste metallic. Use stainless or enameled cast iron for sauces.

What happened to Matfer Bourgeat?

It was long America's Test Kitchen's favorite, but certain batches were recalled in France after testing, and ATK has replaced it as its top pick. We have left it out.
