Field Company makes its pans to the pattern of vintage American cast iron: lighter walls, a polished cooking surface and no pebbly texture. The No.8 is 10.25 inches across the top with an 8.75 inch flat cooking surface, which sits well on a standard large glass top element. At 4.3 pounds by the maker's figure, it is a skillet you pick up without thinking about it, and that habit is what protects the glass.
The listing says it works on every cooktop, glass and ceramic included. It arrives seasoned with grapeseed oil, and this set adds a fiber brush, a chain mail scrubber and a tin of Field's seasoning oil. Owners report it takes to seasoning quickly because the surface is smooth to begin with.
Skip it if you want a pan for a crowd. The flat surface fits three or four chicken breasts. For more, Field makes larger sizes, but a 12 inch pan on a smaller glass element is the wrong trade.
The catch. Bare iron still needs seasoning and drying after every wash, and the price is several Lodge skillets.
