Best Cutting Board for Raw Meat and Poultry

The handsome wood board is for bread, herbs and the cheese course. Raw chicken wants something you can put in the dishwasher without a second thought.

The cutting board for raw meat and poultry

The USDA's advice on cutting boards is short and sensible. Wood and nonporous boards are both acceptable, but keep one board for produce and bread and a separate one for raw meat, poultry and seafood, so that nothing from the chicken ends up on the salad. Wash boards in hot soapy water after use, and throw out any board so worn that its grooves are hard to clean.

That second board does not need to be beautiful. It needs to be nonporous, easy to scrub, safe in the dishwasher and cheap enough to replace when it is scarred. Plastic and paper or plant composites all qualify. A board of a distinct color or material helps too, because the point is never to confuse the raw board with the clean one.

The six below run from an $18 OXO board to a four-board color-coded set in a steel case. All are dishwasher safe, and all are sold on Amazon by Amazon.com or by the maker. Our main cutting board guide covers the wood boards that belong beside them.

How we chose

  1. Nonporous and dishwasher safe. Every board here is rated for the dishwasher by its maker, so raw juices can be dealt with at high heat rather than by hand.
  2. Something to catch the juice. A trench or drip catcher matters when carving a roast chicken or trimming a brisket. We note which boards have one.
  3. Easy to tell apart. A color or material that is clearly not your bread board, so the raw board never gets used for salad by mistake.
  4. Fits the sink and the machine. A board too large for the dishwasher gets washed by hand, which defeats much of the purpose. Sizes are given for each.

We read makers’ specifications, warranties, care instructions and the sources listed at the end. We do not accept paid placements. How we choose

The 6 picks, in detail

OXO Good Grips Plastic Carving & Cutting Board, White, 14.34 x 21.11 in

Best overallNo. 1

OXO Good Grips Plastic Carving & Cutting Board, White, 14.34 x 21.11 in

Our take. A large, light board with a deep juice trench, big enough to break down a chicken or carve a roast.

Keeps for
A few years of regular use
Size
14.34 x 21.11 in
Surface
Double-sided nonporous plastic, one side with juice grooves
Care
Dishwasher safe
Grip
Non-slip feet
Testing
Recommended by America's Test Kitchen for portability

At about 14 by 21 inches, OXO's Carving and Cutting Board holds a whole chicken or a pork shoulder with room to spare. One side has deep grooves to catch juices from a roast or a raw bird, the other is flat for chopping, and the listing rates it dishwasher safe. Non-slip feet and tapered handle edges match the smaller OXO.

America's Test Kitchen recommends it for portability, as the lightest board in its large-board test, and its testers liked the trench. They also noted that the thin board bounced a little under heavy chopping and cleaving, and went briefly concave under hot water without warping permanently.

Skip it if you do a lot of heavy cleaver work; the thick Winco is steadier. Measure your dishwasher before buying, since a 21 inch board may need the bottom rack rearranged.

The catch. Thin enough to bounce under hard chopping.

OXO Good Grips Plastic Everyday Cutting Board

The sensible entry pointNo. 2

OXO Good Grips Plastic Everyday Cutting Board

Our take. A small, light, double-sided plastic board with a drip catcher, sized for a few chicken thighs or a pork chop.

Keeps for
A few years; replace when deeply scored
Size
12.8 x 8.8 x 0.4 in
Material
Nonporous plastic, double sided
Juice
Integrated drip catcher, pouring corners
Grip
Non-slip feet

OXO's Everyday board is 12.8 by 8.8 inches and 0.4 inches thick. Both sides are nonporous plastic that OXO says resists odors and will not dull a knife, the tapered edges double as handles, and a channel around the edge with pouring corners catches juice. Non-slip feet hold it on the counter.

It is the right size for trimming a few pieces of chicken or portioning a steak, and small enough to fit any dishwasher rack or sink. At this price there is no reason not to keep it only for raw meat.

Skip it if you break down whole birds or carve roasts. Twelve inches runs out of room fast, and the larger OXO below is the better board for that work.

The catch. Too small for a whole chicken or a roast.

Winco Heavy-Duty Plastic Cutting Board, 15" x 20" x 1/2", Yellow

The restaurant boardNo. 3

Winco Heavy-Duty Plastic Cutting Board, 15" x 20" x 1/2", Yellow

Our take. A thick, NSF-certified commercial board in the color restaurant kitchens use for raw poultry.

Keeps for
Years of heavy use; replace when the surface is badly scarred
Size
15 x 20 x 0.5 in
Material
High-density polyethylene, NSF certified
Care
Dishwasher safe
Color
Yellow (HACCP code for raw poultry)
Juice groove
None

This is the board found in restaurant kitchens: half an inch of high-density polyethylene, 15 by 20 inches, NSF certified, dishwasher safe and sold in the HACCP colors professional kitchens use to keep foods apart. Yellow is the conventional color for raw poultry and red for raw meat, so a yellow board leaves no doubt about what it is for.

At half an inch thick it is stiffer and heavier than the OXO boards, which means it stays put and does not bounce under a cleaver. America's Test Kitchen's favorite large plastic board is a Winco of the same size, its Statik model with rubber grips; this is the plain version without them, so a damp towel underneath helps.

Skip it if your dishwasher rack cannot take a 20 inch board, or if you want a juice trench. There is none, so carve on something else.

The catch. No grips, no trench, and it is heavy to wash by hand.

Epicurean Gourmet Series Cutting Board with Juice Groove, 14.5-Inch by 11.25-Inch, Natural/Slate

The composite, with a grooveNo. 4

Epicurean Gourmet Series Cutting Board with Juice Groove, 14.5-Inch by 11.25-Inch, Natural/Slate

Our take. A thin paper composite board that goes in the dishwasher, doubles as a trivet and looks better on a counter than plastic.

Made in
USA
Keeps for
Many years; it scratches but does not warp easily
Size
14.5 x 11.25 in
Material
Richlite paper composite
Heat
Resistant to 350°F
Juice groove
One side

Epicurean makes this board in the USA from Richlite, a paper composite, in natural with a slate accent. The listing describes it as nonporous and knife friendly, says it will not absorb odors, and rates it heat resistant to 350 degrees Fahrenheit. One side has a juice groove; the other is flat, and a hole at the end makes it easy to hang.

It is a fair compromise for a kitchen that wants one board for raw meat that does not look like a restaurant board. The two-tone color also makes it easy to recognize as the raw board.

Skip it if you want the board to feel soft under the knife. The surface is harder than plastic or wood, and knife marks show as fine scratches.

The catch. A hard surface that shows scratches and is noisier under the knife than plastic.

Material MK Free Cutting Board, Large, Plant-Based, Dishwasher Safe, Ocean

The plant-based oneNo. 5

Material MK Free Cutting Board, Large, Plant-Based, Dishwasher Safe, Ocean

Our take. A slim, nonporous board of clay minerals and biopolymers, for cooks who would rather not chop on conventional plastic.

Made in
Finland
Keeps for
Several years of regular use
Size
17.5 x 12 x 0.25 in
Material
Clay minerals and biopolymers (maker)
Care
Dishwasher safe
Juice groove
Yes

Material's MK Free board is a biocomposite of natural clay minerals and biopolymers, made in Finland, and the maker says it is free of permanent microplastics. The listing describes the surface as nonporous and suitable for raw meat, poultry and fish, and rates the board dishwasher safe, with no oiling, warping or cracking to manage.

The large size is 17.5 by 12 inches and only a quarter inch thick, with a juice groove and a hanging hole. The Ocean blue is easy to keep apart from a wood board.

Skip it if you want a heavy board that stays put on stone. Material itself suggests a damp cloth underneath on quartz or marble.

The catch. Light and thin, so it can slide on a smooth counter.

Joseph Joseph Folio 4-Piece Color-Coded Chopping Board Set, Stainless Steel Slimline Case, Light Stone

The color-coded setNo. 6

Joseph Joseph Folio 4-Piece Color-Coded Chopping Board Set, Stainless Steel Slimline Case, Light Stone

Our take. Four color-coded boards for raw meat, fish, vegetables and cooked food, stored upright in a steel case on the counter.

Keeps for
A few years per board
Boards
4, color-coded for raw meat, fish, vegetables and cooked food
Board size
About 9.5 x 13.5 in (retailer figure)
Material
Polypropylene boards, stainless steel case
Care
Boards dishwasher safe; wipe the case

The Folio set is the system a careful household ends up wanting: four boards, each coded by color on its non-slip feet for raw meat, fish, vegetables and cooked food, standing in an angled stainless steel case that lets air circulate between them. Retailers give each polypropylene board as about 9.5 by 13.5 inches.

The boards go in the dishwasher; the steel case is wiped with a damp cloth. The textured surface is meant to mark a little with use, Joseph Joseph says, which is kinder to knives.

Skip it if you cook large cuts. The boards are small, and none has a deep trench. The same set in a plastic case costs about half as much.

The catch. Small boards, and a lot of money for four pieces of plastic.

Every comparison

Keeping raw and clean apart

Give the raw board a job and a place. Use it for raw meat, poultry and fish only, keep it somewhere other than the bread board, and choose one that looks different. Professional kitchens use colors for this reason: yellow for raw poultry, red for raw meat, blue for fish.

When cutting both raw meat and vegetables for the same dish, cut the vegetables first, or use two boards. Washing a board between jobs works, but it is the step most often skipped.

Washing and sanitizing

Hot soapy water and a scrub are enough after most use, and every board here can also go in the dishwasher. The USDA also suggests an occasional sanitizing rinse of one tablespoon of unscented liquid chlorine bleach per gallon of water, left on the board for several minutes, then rinsed.

Dishwasher heat can warp thin plastic boards. America's Test Kitchen saw this in testing; its thick winner survived more than 50 cycles. Lay a large board flat on the bottom rack rather than wedging it upright.

When to replace it

Plastic boards are meant to be replaced. When the surface is so scored that the grooves stay stained after washing, or the board has warped and rocks on the counter, buy a new one. At $18 to $40, that is a small price for a clean surface.

Frequently asked questions

What kind of cutting board is best for raw meat?

A nonporous board you can put in the dishwasher, such as plastic or a paper or plant composite. Wood is acceptable to the USDA too, but it has to be washed by hand, so most cooks keep a separate dishwasher-safe board for raw meat and poultry.

Can you cut raw chicken on a wood cutting board?

Yes, if you scrub it with hot soapy water straight afterward and let it dry. Do not soak it or put it in the dishwasher. Many cooks still prefer a plastic or composite board for chicken because it can go in the dishwasher.

Should I have separate cutting boards for meat and vegetables?

Yes. The USDA recommends one board for fresh produce and bread and a separate one for raw meat, poultry and seafood.

What color cutting board is for raw chicken?

In commercial kitchens using the HACCP color system, yellow is for raw poultry, red for raw meat, blue for raw fish, green for produce and white for dairy and bread. At home any system works, as long as everyone knows it.

Are plastic cutting boards dishwasher safe?

Most are, including every board in this guide, but thin boards can warp after many hot cycles. Thicker boards hold up better, and laying the board flat helps.

How often should you replace a plastic cutting board?

When it is deeply scored, stays stained after washing, or has warped. For a board used daily, that is often every year or two.
