The Best Meat Thermometers: Instant-Read and Leave-In

A roast is done at a number, not at a time on a recipe card. Five thermometers that tell you the number, from a $24 pocket probe to a four-channel alarm that reports to your phone.

The meat thermometer that ends the guessing

Most overcooked meat is overcooked because nobody was sure. The recipe said three hours, the oven runs hot, the bird was a pound heavier than planned, and so it stayed in for another twenty minutes to be safe. A thermometer replaces all of that with one reading, and it is the cheapest way to cook a better roast.

There are two kinds, and a well-run kitchen owns one of each. An instant-read thermometer is a folding probe you push into the meat, read in two or three seconds, and pull out again. A leave-in thermometer stays in the roast for the whole cook, with a cable or a radio link to a display outside the oven, and sounds an alarm at the temperature you set. The first checks; the second watches.

If you already have our Thanksgiving pick, the ThermoWorks DOT, you have a leave-in alarm and need only an instant-read to go with it. The five below cover both jobs at every price, from about $24 to about $259, and the price comparison comes down to what the extra money buys: a longer probe, a leave-in alarm, more channels. Every one is sold on Amazon by its maker.

How we chose

  1. Speed. An instant-read should settle in about three seconds, so the oven door is open for as little time as possible.
  2. Stated accuracy. We favored makers that publish an accuracy figure and, where offered, ship a calibration certificate with each unit.
  3. Built for a kitchen. Water resistance, a probe that folds or stores safely, and a battery that lasts through the season.
  4. Sold by the maker. Each pick is sold on Amazon US by its brand, so what arrives carries the maker's warranty.

We read makers’ specifications, warranties, care instructions and the sources listed at the end. We do not accept paid placements. How we choose

The 5 picks, in detail

ThermoWorks Classic Thermapen Instant-Read Thermometer, Dove Grey

Best overallNo. 1

ThermoWorks Classic Thermapen Instant-Read Thermometer, Dove Grey

Our take. The long folding thermometer the rest of the category is measured against, still fast and still plain.

Keeps for
A decade or more; serviced by ThermoWorks, 2-year warranty
Type
Folding instant-read, auto on and off
Reading time
1 to 3 seconds (maker's figure)
Accuracy
±0.7°F
Range
-58 to 572°F
Battery
Up to 1,500 hours
Warranty
2 years

The Classic Thermapen is the design everyone else copied: a long folding probe that switches the unit on as it opens and off as it closes, with no other buttons to trap food. ThermoWorks quotes one to three seconds to a full reading, accuracy of plus or minus 0.7°F, a range of -58 to 572°F and 1,500 hours from a battery.

It ships with a NIST-traceable calibration certificate and an IP65 splash-resistant body, and ThermoWorks backs it with a two-year warranty and its own service. The long probe reaches the center of a turkey breast or a rib roast with room to spare, which is what separates it from the cheaper folders.

ThermoWorks also sells the Thermapen ONE, about $20 more, which reads in about a second and has an auto-rotating backlit screen; it appears in our guide to gifts for people who cook. For a roast checked once or twice at the end, the Classic's extra second costs nothing.

The catch. The display does not rotate or light up, which the Thermapen ONE and ThermoPop 2 both do.

Lavatools Javelin Ultra-Fast 3-Second Digital Instant Read Meat Thermometer, Sambal

The sensible entry pointNo. 2

Lavatools Javelin Ultra-Fast 3-Second Digital Instant Read Meat Thermometer, Sambal

Our take. A compact folding probe that reads in three to four seconds and costs about the same as a bottle of decent wine.

Keeps for
Several years; the maker quotes 4,000 or more hours per battery
Type
Folding instant-read
Reading time
3 to 4 seconds (maker's figure)
Probe
2.75 inches
Water resistance
IP65
Extras
Magnetic back, auto-sleep after 60 minutes, NSF certified

The Javelin is a folding instant-read at a quarter of the Thermapen's price. The 2.75 inch probe swings out of a slim body, the 1.4 inch display is easy to read over a roasting pan, and magnets on the back let it live on the side of the fridge where it will actually be found.

Lavatools quotes readings in three to four seconds, an IP65 water-resistant body and NSF certification. The battery is rated for 4,000 or more hours, helped by an auto-sleep after 60 minutes, so it is not a tool you will be feeding batteries every holiday.

The short probe is the limit. It reaches the center of a chop, a chicken breast or a pork tenderloin easily, but in a large turkey or a standing rib roast you are working near the end of its reach. Buy the ThermoPop 2 or the Thermapen if big roasts are the point.

The catch. The short probe is awkward in a deep turkey breast or a thick rib roast.

ThermoWorks ThermoPop 2 Instant Read Thermometer, Dove Grey

The sensible middleNo. 3

ThermoWorks ThermoPop 2 Instant Read Thermometer, Dove Grey

Our take. ThermoWorks accuracy in a simple stick thermometer, with a screen that turns to face you.

Keeps for
Years; ThermoWorks services its own thermometers
Type
Stick instant-read, rotating backlit display
Reading time
2 to 3 seconds (maker's figure)
Accuracy
±1°F in key cooking ranges
Water resistance
IP67
Included
NIST-traceable calibration certificate

The ThermoPop 2 is ThermoWorks' value instant-read: a straight probe in a pocket-sized body with a single button. ThermoWorks gives a two to three second reading and accuracy of plus or minus 1°F in the key cooking ranges, and each unit ships with a NIST-traceable calibration certificate.

The backlit display rotates on its own to read right side up whichever hand you hold it in, which matters more than it sounds when you are reaching into a hot oven. The body is rated IP67, so it can be rinsed under the tap without ceremony.

It does not fold, so the probe needs its sleeve on in a drawer. For a household that checks a roast a few times a year and a steak most weekends, it does everything the pricier models do, a second slower.

The catch. No folding probe; keep the sleeve on it in the drawer.

MEATER Pro Smart Meat Thermometer, Honey

The wireless leave-inNo. 4

MEATER Pro Smart Meat Thermometer, Honey

Our take. A probe with no cable at all, which goes into the roast and reports to your phone until it is time to pull it.

Keeps for
Several years; the probe battery is sealed and recharges in its dock
Type
Wireless leave-in probe, app based
Connection
Bluetooth long range
Heat rating
1,000°F (maker's figure)
Care
Dishwasher safe (maker's listing)
Probes
1

The MEATER Pro is a single wireless probe. It goes into the thickest part of the roast before it goes in the oven, with nothing trailing out through the door, and sends the internal temperature to the MEATER app over long-range Bluetooth. The app sets the target, warns you as it approaches and estimates the time remaining.

MEATER lists the probe as dishwasher safe and rates it for grilling, smoking, roasting, deep frying and sous vide, and its listing gives a heat rating of 1,000°F. For an oven roast the practical benefit is simple: you watch the bird from the table, not by opening the oven.

It depends on a phone and an app, and one probe watches one spot. Cooks who want a display on the counter and nothing to charge should buy a cabled alarm like the ThermoWorks DOT instead.

The catch. No screen of its own; without the phone and the app, it tells you nothing.

ThermoWorks Signals BBQ Alarm Thermometer with Wi-Fi and Bluetooth, Dove Grey

If you cook for a crowdNo. 5

ThermoWorks Signals BBQ Alarm Thermometer with Wi-Fi and Bluetooth, Dove Grey

Our take. Four probes, four alarms and a display on the counter, for the kitchen roasting a turkey and a ham at once.

Keeps for
Years; probes are replaceable
Type
Cabled leave-in, 4 channels
Included
Pro-Series cooking probes and an air probe
Accuracy
±1.8°F (maker's figure)
Connection
Wi-Fi and Bluetooth, or standalone
Battery
Up to 16 hours, rechargeable; adapter included
Housing
IP66, magnetic

Signals is ThermoWorks' four-channel alarm thermometer. It ships with Pro-Series high temperature cooking probes and an air probe, and each channel takes its own high and low alarm, so one unit can watch the turkey breast, the thigh, a ham in the second oven and the oven air itself.

It works on its own as a counter display, and over Wi-Fi and Bluetooth it streams every channel to the ThermoWorks app with graphs and alerts. ThermoWorks lists probe accuracy of plus or minus 1.8°F, an IP66 splash-resistant housing, magnets and up to 16 hours on its rechargeable battery, with an adapter for longer cooks.

It is built with the smoker in mind, and most kitchens do not need four channels. For one roast in one oven, the DOT or the MEATER Pro does the job for a fraction of the price.

The catch. Cables and a counter unit are more clutter than a holiday meal usually needs.

Compared.

Every comparison

Where to put the probe

In the thickest part of the meat, away from bone, which conducts heat and reads high. In a turkey, check the thickest part of the breast, the innermost part of the thigh and the wing; the USDA wants 165°F in all three.

For an instant-read, push past the center and draw the probe back slowly while watching the display. The lowest number you see is the true center.

Pull it early

A large roast keeps cooking after it leaves the oven, often by several degrees while it rests. Pull beef, pork and lamb roasts a little under your target and let the rest finish them. The USDA's safe minimum for whole cuts of beef, pork, veal and lamb is 145°F with a three-minute rest.

Check the thermometer, not just the meat

Once a season, put the probe in a glass packed with ice and topped with cold water. It should read 32°F, give or take its stated accuracy. A thermometer that has drifted will not tell you so on its own.

Frequently asked questions

How do meat thermometer prices compare?

From about $24 to about $259. A fast instant-read starts at about $24 (Lavatools Javelin) and about $47 (ThermoPop 2); the Classic Thermapen is about $105. Leave-in models run from about $100 for the wireless MEATER Pro to about $259 for the four-probe ThermoWorks Signals.

Do I need an instant-read or a leave-in thermometer?

For roasts, both help. The leave-in alarm tells you when to start paying attention without opening the oven; the instant-read confirms the thigh, the center and the thin end before the meat comes out.

Is the Thermapen worth it over a cheaper thermometer?

For a long probe that reaches the center of a big roast, a two-year warranty and ThermoWorks service, yes. For steaks and chops, the Javelin or the ThermoPop 2 does the same job.

What temperature is a turkey done?

The USDA says 165°F, measured in the thickest part of the breast, the innermost part of the thigh and the wing.

Can I leave an instant-read thermometer in the oven?

No. The body is not built for oven heat. Use a leave-in probe for anything that stays in the oven.

Are wireless probes accurate?

They measure well; the tradeoffs are the phone, the app and the charging. A cabled alarm with a counter display is simpler for a once-a-year roast.
