Field Company set out to make new pans that handle like the old Griswold and Wagner skillets: thinner walls, less weight, and a cooking surface machined smooth. The No.10 is 11 5/8 inches across the rim with a 9 3/4 inch flat cooking surface, and weighs 6 pounds. A Lodge of similar size weighs about 2 pounds more.
It is cast in green sand in the United States and arrives with three coats of grapeseed oil seasoning. The smooth surface is the reason to pay for it: food releases sooner, the pan wipes clean more easily, and a fried egg is less of an event. The lighter weight means it gets used on weeknights rather than saved for steak.
Skip it if you cook for one or two. The No.8, at 10 1/4 inches and 4.5 pounds, is the size Field Company is best known for.
The catch. The label says No.10, but the pan is almost 12 inches across. Check the cooking surface, not the number.
