USA Pan is a family company, owned by the Bundy family, that has made commercial-grade bakeware in the United States for more than fifty years. The cookie sheet is heavy-gauge aluminized steel, sold as warp resistant, with a corrugated surface that the maker says helps air circulate under the dough and release what is baked on it.
The coating is Americoat, a silicone that USA Pan describes as free of PTFE, PFOA and BPA. Cookies and bar cookies come off cleanly, and a quick wash with hot water and a soft sponge is all it asks. The baking surface is 17 by 12.25 inches, large enough for a full batch and for a half-sheet silicone mat if you prefer one.
Nonstick means rules: silicone, nylon or wooden tools only, and no scouring. The corrugations can leave a faint ridged pattern on the bottoms of thin cookies, which some bakers mind and most never notice.
The catch. The coating will not survive metal spatulas or abrasive scrubbing.
