Cookware Sets: Stainless Clad, Enameled and Induction-Ready

A good set is five or six pans you will use every week, in one material, from a maker that sells each piece on its own. Anything more is shelf space.

The cookware set

Cookware sets are counted the way knife sets are: every lid is a piece. A '10 piece' set is usually six pans and four lids, and a '17 piece' set is often a few useful pans padded with small saucepans, a steamer insert and utensils. Count the pans, not the pieces.

The pans a cook actually uses are few. A 10 or 12 inch skillet. A 3 quart saucepan and a smaller one. A 3 quart sauté pan or a braiser. A stockpot of 6 to 8 quarts. A heavy pot for braising, which is where enameled cast iron comes in. A nonstick skillet for eggs sits outside most stainless sets, and that is fine.

Material matters more than brand. Clad stainless, a core of aluminum bonded between layers of steel, heats evenly, sears well, goes in the oven and works on induction when the outer layer is magnetic steel, as it is on every stainless set here. Enameled cast iron heats slowly and holds heat for a long time, which suits braises, soups and bread. Most kitchens are well served by a stainless set plus one Dutch oven.

How we chose

  1. Pans you will use. Sets judged on their pans, not their piece count, and marked down for filler such as tiny saucepans and steamer inserts.
  2. Construction. Fully clad from base to rim, not a disc bonded to the bottom only, with a stated core and ply count.
  3. Induction and oven. Induction compatibility and a stated oven-safe temperature for the pans and the lids.
  4. Open stock and warranty. Whether each pan is sold on its own, so a set can be added to later, and the length of the warranty.

We read makers’ specifications, warranties, care instructions and the sources listed at the end. We do not accept paid placements. How we choose

The 5 picks, in detail

Tramontina Signature Tri-Ply Clad Stainless Steel 10-Pc Pots and Pans Set

Best overallNo. 1

Tramontina Signature Tri-Ply Clad Stainless Steel 10-Pc Pots and Pans Set

Our take. Tri-ply clad stainless with a braiser in place of filler, often compared to All-Clad at a fraction of the price.

Keeps for
Decades; lifetime warranty
Pieces
8 and 10 in frying pans, 1.5 and 3 qt saucepans, 3 qt braiser, 6 qt sauce pot, 4 lids
Construction
Tri-ply clad, aluminum core
Oven safe
Up to 500°F
Stovetops
All, including induction
Warranty
Lifetime

Tramontina's Signature Tri-Ply Clad line has long been named by reviewers, Wirecutter among them, as the value alternative to All-Clad. It is fully clad with an aluminum core, works on every stovetop including induction, goes in the oven to 500°F, and is NSF certified, with a lifetime warranty.

The ten pieces are well chosen: 8 and 10 inch frying pans, 1.5 and 3 quart saucepans with lids, a 3 quart braiser with lid and a 6 quart sauce pot with lid. The braiser is the clever part, a wide, shallow pan that does the work of a sauté pan and goes from stovetop to oven for a braise.

The maker calls it dishwasher safe; hand washing keeps the mirror finish longer. Skip it if you need a big stockpot for stock or pasta for a crowd, since the largest pot is 6 quarts. Price swings widely, so watch for it near $250.

The catch. The largest pot is 6 quarts, and the price moves a great deal from week to week.

Cuisinart Stainless Steel Pots and Pans Set, Induction Compatible, 12 pc

The entry pointNo. 2

Cuisinart Stainless Steel Pots and Pans Set, Induction Compatible, 12 pc

Our take. Fully clad triple ply stainless at a price that makes a full kitchen affordable.

Keeps for
Many years; clad stainless has little to wear out
Pieces
1.5 and 3 qt saucepans, 3.5 qt sauté pan, 8 qt stockpot, 8 and 10 in skillets, steamer insert, 5 lids
Construction
Triple ply, aluminum core, clad up the sides
Oven safe
Up to 500°F
Stovetops
All, including induction

Cuisinart's triple ply set is the long-running budget answer to All-Clad: an aluminum core under a brushed stainless exterior, with the heat carried up the sidewalls as well as across the base. It works on induction, and the pans and lids go in the oven to 500°F.

Twelve pieces is seven pans and five lids: 1.5 and 3 quart saucepans, a 3.5 quart sauté pan with a helper handle, an 8 quart stockpot, 8 and 10 inch skillets, and a steamer insert. The steamer is the only real filler. The largest skillet is 10 inches, so many cooks will add a 12 inch pan.

Skip it if you want the heft of a heavier pan; these are lighter than All-Clad and respond faster, which cuts both ways. The Cool Grip handles are comfortable but not everyone likes their shape.

The catch. No 12 inch skillet, and the steamer insert is a piece you may never use.

All-Clad D3 Stainless Steel Cookware Set, 10-Piece

The American originalNo. 3

All-Clad D3 Stainless Steel Cookware Set, 10-Piece

Our take. The original bonded tri-ply, made in Pennsylvania, with nothing in the set that sits in a cupboard.

Made in
USA (Pennsylvania)
Keeps for
A lifetime; limited lifetime warranty
Pieces
8 and 10 in fry pans, 2 and 3 qt saucepans, 3 qt sauté pan, 8 qt stockpot, 4 lids
Construction
Tri-ply, aluminum core, stainless steel
Oven safe
Up to 600°F, broiler safe
Stovetops
All, including induction
Warranty
Limited lifetime

All-Clad invented bonded cookware and has made it in its Pennsylvania factory since 1971. D3 is the original three ply: an aluminum core between layers of stainless steel. It heats evenly, sears properly and goes in the oven or under the broiler to 600°F, higher than the other stainless sets here.

The ten pieces are 8 and 10 inch fry pans, 2 and 3 quart saucepans with lids, a 3 quart sauté pan with lid and an 8 quart stockpot with lid. Every piece gets used, and every one is sold on its own, so the set can grow.

The long, straight handle is designed for an underhand grip. Many cooks love it, and some find it digs into the palm. Skip it if the difference between this and the Tramontina is money you would rather spend on a Dutch oven. All-Clad says hand wash only.

The catch. About four times the price of the Tramontina for a similar construction, and hand wash only.

Made In Cookware 10 Piece Stainless Steel Pot and Pan Set, 5 Ply Clad

Five ply, made in ItalyNo. 4

Made In Cookware 10 Piece Stainless Steel Pot and Pan Set, 5 Ply Clad

Our take. Heavier five ply stainless from Italy, with a saucier in place of a sauté pan.

Made in
Italy
Keeps for
A lifetime with ordinary care
Pieces
8 and 10 in frying pans, 2 and 4 qt saucepans, 3 qt saucier, 8 qt stockpot, 4 lids
Construction
5 ply stainless clad
Stovetops
All, including induction (430 stainless exterior)
Handles
Riveted, stay-cool design

Made In's stainless is five layers of metal rather than three, which adds weight and heat retention, and it is made in Italy. The top layer is magnetic 430 stainless steel, so it works on induction, and the handles are riveted with stainless rivets.

The set is 8 and 10 inch frying pans, 2 and 4 quart saucepans with lids, a 3 quart saucier with lid and an 8 quart stockpot with lid. The saucier, a saucepan with rounded sides, is easier to whisk and stir in than a straight-sided pan, and good cooks tend to reach for it daily.

Skip it if you want a sauté pan for shallow frying; there is none here. Five ply is also heavier than tri-ply, which matters when lifting a full stockpot.

The catch. Heavy, expensive, and there is no sauté pan in the set.

Le Creuset Enameled Cast Iron Signature Cookware Set, 5 pc., White

The enameled setNo. 5

Le Creuset Enameled Cast Iron Signature Cookware Set, 5 pc., White

Our take. A Dutch oven, a saucepan and a skillet in enameled cast iron, for the cook who braises more than they sear.

Made in
France
Keeps for
Generations; lifetime warranty on the cast iron
Pieces
5.5 qt round Dutch oven, 1.75 qt saucepan, 9 in skillet, 2 lids (per Le Creuset)
Material
Enameled cast iron, no seasoning needed
Oven safe
Up to 500°F; black knobs to 480°F
Stovetops
All, including induction
Care
Dishwasher safe per listing; hand washing is kinder to the enamel

Enameled cast iron is not a replacement for stainless; it is the partner to it. It heats slowly, holds heat for a long time and never needs seasoning, which makes it the material for braises, stews, soups and bread. The Signature line has larger handles and a light sand interior enamel that shows browning clearly.

Le Creuset lists the current five piece set as a 5.5 quart round Dutch oven, a 1.75 quart saucepan and a 9 inch skillet, with lids for the two pots. Older versions of the set used different sizes, so check the listing before buying. Everything is oven safe to 500°F, with the black Signature knobs rated to 480°F, and works on every cooktop including induction.

Skip the set if you only want the Dutch oven, which is the piece that does the real work, and see our guide to Dutch ovens. The saucepan is heavy for its size, and a 9 inch skillet is small.

The catch. Heavy, costly, and most cooks would get more from the Dutch oven alone.

Every comparison

When to buy open stock instead

Buy pans one at a time when you already own some good ones, when you cook for one or two, or when a set is built around sizes you will not use. A 12 inch skillet, a 3 quart saucepan and a Dutch oven cover most cooking and often cost less than a set.

Buy the set when you are starting from nothing and the set contains the pans you would have bought singly. Every maker here sells its pans individually, so a set can be topped up later with the same line.

Reading the piece count

Lids count as pieces, and so do steamer inserts, pasta inserts and utensils. Divide the count roughly in half to get the pans. A large set with many small saucepans is less useful than a small one with a 12 inch skillet.

Induction

Induction needs a magnetic base. Clad stainless sets with a magnetic steel exterior, all the stainless sets here, and all enameled cast iron work. Plain aluminum and copper do not, unless they have a steel plate in the base. A fridge magnet that sticks firmly to the bottom of a pan is a reliable test.

Nonstick sits outside the set

Nonstick coatings wear out in a few years, while clad stainless lasts a lifetime. Keep them separate: buy a stainless set, and add one inexpensive nonstick skillet for eggs that you expect to replace.

Frequently asked questions

Is it better to buy a cookware set or individual pieces?

A set is good value when you are starting from scratch and it contains the pans you would buy anyway. If you already own some good pans, or need only three or four, buy open stock.

What pieces should a cookware set have?

A 10 or 12 inch skillet, two saucepans around 1.5 to 3 quarts, a sauté pan or braiser, and a stockpot of 6 to 8 quarts. A Dutch oven is best bought separately in enameled cast iron.

Is tri-ply or five ply better?

Five ply is heavier and holds heat a little better; tri-ply heats a little faster and is lighter to lift. Both cook well. Full cladding up the sides matters more than the number of layers.

Is All-Clad worth it over Tramontina?

All-Clad is made in the USA, is oven safe to 600°F and is the original. Tramontina's tri-ply clad performs well for a fraction of the price. For most cooks, the difference is better spent on a Dutch oven.

Does stainless steel cookware work on induction?

Clad stainless with a magnetic steel exterior does, including every stainless set in this guide. Check with a magnet if you are unsure.
