Glass is the forgiving choice for a double-crust fruit pie. It heats more slowly than aluminum, but you can lift the pie and look at the bottom. When the underside is golden and the filling is bubbling through the vents, it is done, and no timer can tell you that as well.
OXO makes this plate from borosilicate glass, which the maker says withstands extreme temperature changes, and gives it a generous rim that is easy to hold with an oven mitt and wide enough for a crimped edge. The 9-inch size is marked on the glass. It is dishwasher, microwave and freezer safe.
Even borosilicate deserves care: do not set a hot plate on a wet or cold counter, and do not add liquid to a hot empty dish. For blind-baking a shell, the aluminum pan above does the job faster.
The catch. Glass heats slowly; bake on a lower rack or a preheated sheet pan for a crisp bottom.
