Best Saucepan: The 2 to 3 Quart Pan to Buy Once

The saucepan does more cooking than any pot in the house and gets less thought. Buy one clad pan of about three quarts, with a lid, and it will outlast the stove.

The saucepan you buy once

Rice, oatmeal, a pan sauce's second life as gravy, eggs for the week, a pint of stock reheated, custard for a trifle. Almost none of it is glamorous, and all of it happens in the same pan. That is the case for buying it well once rather than cheaply three times.

Size first. Two quarts is right for a couple and for sauces. Three quarts is the one to own if you own only one: it holds rice for six, a double batch of polenta, or a pound of potatoes for mashing, and it is still small enough for the back burner. Anything above four quarts is a soup pot.

Construction second. A saucepan should be clad, meaning layers of stainless and aluminum bonded all the way up the sides, not a thin pot with a thick disk welded to the bottom. Clad pans heat evenly up the walls, which matters most for the things a saucepan is for: thick sauces, custards and grains that scorch at the edges. Every pick below is sold on Amazon by Amazon.com or by the maker itself.

How we chose

  1. Fully clad. Stainless and aluminum bonded through the base and up the sides, so heat does not stop at the bottom edge.
  2. Size and lid. Two to three quarts, with a lid that fits well. A saucepan without a lid is half a tool.
  3. Oven and cooktop limits. Induction compatibility and the oven temperature the maker states.
  4. Made where, backed how. Country of manufacture and warranty as the maker or listing states them.

We read makers’ specifications, warranties, care instructions and the sources listed at the end. We do not accept paid placements. How we choose

All-Clad 4203 Stainless Steel Tri-Ply Bonded Sauce Pan with Lid, 3-Quart

Best overallNo. 1

All-Clad 4203 Stainless Steel Tri-Ply Bonded Sauce Pan with Lid, 3-Quart

All-Clad invented bonded cookware and has made it in its Pennsylvania factory since 1971. D3 is the original line: a stainless interior and exterior around an aluminum core, bonded all the way up the sides. The listing is precise about origin: made in the USA with global components.

Three quarts is the size to own if you own one. The rim flares outward so sauces pour without dribbling down the side, and the pan is oven and broiler safe to 600 degrees Fahrenheit and works on induction. The riveted handle is shaped for an underhand grip, and the grooved top is a matter of taste.

All-Clad says hand wash only, and the polished exterior shows every fingerprint. Skip it if the dishwasher is not negotiable; the Tramontina below goes in.

The catch. Hand wash only, and the handle shape divides people.

Tramontina Signature Tri-Ply Clad Stainless Steel 3-Quart Sauce Pan

Tramontina's Signature line is tri-ply clad, with an aluminum core, riveted stainless handles and a stainless lid. It works on induction, gas, electric and glass tops, goes in the oven to 500 degrees Fahrenheit, is NSF certified and carries a lifetime warranty. That is most of what the expensive pans promise.

It is also dishwasher safe, which the All-Clad is not. For a first kitchen, a rental, or a second saucepan beside a good one, it is hard to argue with.

What you give up is finish and feel: the handle and rim are less refined, and the pan will not look like much on an open shelf. Skip it only if the pan is also going to be a thing you enjoy owning.

The catch. Plainer handle and finish than the premium pans.

Made In Cookware 2 Quart Stainless Steel Saucepan with Lid, 5 Ply Stainless Clad

The five-ply alternativeNo. 3

Made In Cookware 2 Quart Stainless Steel Saucepan with Lid, 5 Ply Stainless Clad

Our take. A five-ply Italian-made saucepan with a hollow handle, sold on Amazon by Made In itself.

Made In's Stainless Clad saucepan is five layers of metal, made in Italy, with a 430 stainless outer layer that makes it work on induction. The 2 quart size measures 7 inches across with a 6 inch cooking surface and about 3.85 inches deep, and it comes with a lid.

The handle is hollow, which Made In says keeps it cooler, and the rim is rolled for pouring. Two quarts suits a couple, custards, small batches of rice and every sauce most home cooks make. It is sold on Amazon by Made In directly.

Skip it if you want one saucepan for a family; the 2 quart is small for rice for six. Made In also makes a 4 quart, which is a jump past the ideal middle.

The catch. Two quarts is the smaller of the useful sizes.

Made In Cookware 3 Quart Stainless Steel Saucier Pan, 5 Ply Stainless Clad

For the cook who stirsNo. 4

Made In Cookware 3 Quart Stainless Steel Saucier Pan, 5 Ply Stainless Clad

Our take. A saucier: rounded where the wall meets the base, so a whisk reaches everything and nothing scorches in the corner.

Construction
5-ply stainless clad
Diameter

A saucier is a saucepan with a curved bottom and wider mouth. There is no right-angled corner for risotto, polenta or pastry cream to hide in and burn, and a whisk or spoon sweeps the whole surface. Cooks who make a lot of sauces and custards often prefer one to a straight-sided pan.

This is Made In's five-ply, Italian-made 3 quart version: 10 inches across the top, a 7 inch cooking surface, about 3.5 inches deep, induction compatible, with a stay-cool handle fastened with stainless rivets. The wide mouth also reduces liquids faster.

The trade is footprint. A 10 inch mouth takes more room on the stove and in the cupboard, and it holds less for its width than a straight-sided pan. Check the listing for a lid before you buy; the title does not promise one.

The catch. Wider than a saucepan of the same capacity, and a lid is not named in the listing title.

Le Creuset Enameled Cast Iron Signature Saucepan, 2.25 qt., Flame

If money is no objectNo. 5

Le Creuset Enameled Cast Iron Signature Saucepan, 2.25 qt., Flame

Our take. Enameled cast iron in saucepan form: slow, steady heat for sauces and grains, and the one to leave out on the stove.

France

Generations, if the enamel is treated gently
Capacity
2.25 qt, with lid
Material
Enameled cast iron
Oven

Care
Dishwasher safe (listing); hand washing kinder to enamel

Le Creuset casts its enameled iron in Fresnoy-le-Grand, northern France. The Signature saucepan is its Dutch oven shrunk to a long-handled pan: heavy iron that heats evenly and holds heat, a light interior enamel that lets you see a sauce darken, and a tight lid that returns steam to the food. The stainless knob is safe at any oven temperature and the pan to 500 degrees Fahrenheit.

Cast iron is slow to heat and slow to cool, which is the point for béchamel, caramel, polenta and rice kept warm on the back of the stove. The listing says it is safe for the dishwasher and metal utensils, though wood and a hand wash will keep the enamel looking new longer.

It is heavy, as all cast iron is, and a full pan held by its one handle is a two-handed job. Skip it if you want a pan for quick boils; clad stainless is faster.

The catch. Heavy, slow to heat, and nearly double the price of the clad pans.

Every comparison

Straight sides or saucier

Straight-sided saucepans hold more for their width and fit a small burner. Sauciers have a curved base that a whisk can clean, which suits sauces, custards and risotto. If you stir more than you boil, get the saucier. If you boil more than you stir, get the saucepan.

Keeping stainless clean

Heat the pan before adding fat, and let food release before you move it. For the rainbow tint and brown film that builds on stainless, a paste of Bar Keepers Friend and water takes it off. Never plunge a hot clad pan into cold water.

For enameled iron, heat on medium, never empty on high, and let it cool before washing. Thermal shock is what cracks enamel, and most warranties exclude it.

What to skip

Disk-bottom pans with thin walls, which scorch where the disk ends. Nonstick saucepans for anything but the occasional porridge, since the coating wears and the pan will not last. Glass lids, which crack and fog.

Frequently asked questions

What size saucepan should I buy?

Three quarts if you own one. Two quarts suits a couple and small sauces. Buy both if you cook most nights.

Is All-Clad worth it over Tramontina?

For finish, pouring rim and origin, yes. For function, Tramontina's clad pan gets you most of the way for about a third of the price, and it can go in the dishwasher.

What is the difference between a saucepan and a saucier?

A saucier has a rounded base where the wall meets the bottom, so nothing gets trapped in a corner. It is easier to whisk in and better for sauces and custards.

Can a stainless saucepan go in the dishwasher?

It depends on the maker. All-Clad says hand wash its D3. Tramontina says its Signature pan is dishwasher safe.

Is 5-ply better than 3-ply?

Not automatically. More layers can mean steadier heat, but a well-made tri-ply pan like All-Clad D3 cooks evenly. Weight, balance and finish matter as much as layer count.
