The gifts for people who bake

A baker's kitchen fills up with novelty quickly: stamped cookie cutters, gadget molds, tins shaped like cartoon characters. None of it gets used much. What gets used every week is a short list of plain things. A scale. A scraper. A pin that rolls evenly. Pans that bake evenly and do not warp. A heavy pot for bread.

So that is what this list is. Each pick is a tool that bakers reach for constantly, made by a company known for it, and every one is sold on Amazon by Amazon.com or by the maker. We left out the Bundt and pie dish from our under-$50 list and the stand mixers, which have their own guide.

Prices run from about $10 for a bench scraper to about $300 for the Challenger bread pan. The cheap tools are not lesser gifts. A good scraper and a good scale will be in use long after most expensive gadgets are in a cupboard.

How we chose

  1. Used every week. Tools a baker reaches for with nearly every recipe, not a mold for one occasion.
  2. Accurate and even. Scales that read in grams, pans that heat evenly and do not warp, a pin with a true barrel.
  3. Covers bread, cake and pastry. Something for the sourdough baker, the layer-cake baker and the one who makes pie crust.
  4. Sold straight. Every pick is sold on Amazon US by Amazon.com or by the maker.

We read makers’ specifications, warranties, care instructions and the sources listed at the end. We do not accept paid placements. How we choose

The 6 picks, in detail

Norpro Stainless Steel Scraper/Chopper, 6in/15cm x 4in/10cm

Best overallNo. 1

Norpro Stainless Steel Scraper/Chopper, 6in/15cm x 4in/10cm

Our take. The flat steel blade bread bakers use to divide, shape and clean up, and one they will use daily.

Keeps for
Decades; a steel blade and a handle, nothing else
Blade
Stainless steel, about 6 x 4 in
Edge
Measuring guide printed on the blade
Handle
Rounded, integral
Uses
Dividing dough, scraping the counter, moving chopped food

A bench scraper is the cheapest tool in a bread baker's kit and the one used most. It divides dough cleanly, lifts a sticky round off the counter, tightens a loaf as it is shaped, and clears flour from the work surface at the end.

Norpro's version is a straight-sided stainless steel blade about 6 by 4 inches with a rounded handle and a measuring guide along the edge, useful for cutting pasta or pastry to width. It also moves chopped vegetables from board to pan, so it earns its place even in weeks with no baking.

Anyone who bakes bread probably owns one, but a second never goes unused. Pair it with the scale for a gift under $40.

The catch. It is a very modest gift on its own; it works best tucked in with something else.

Escali Primo Digital Food Scale, Black

The scaleNo. 2

Escali Primo Digital Food Scale, Black

Our take. The simple gram scale that bakers recommend to one another, with a sealed panel that shrugs off flour.

Keeps for
Years; the maker offers a lifetime warranty
Capacity
11 lb (5,000 g)
Readings
1 g steps; g, oz, lb:oz
Size
8.5 x 6 x 1.5 in
Controls
Two buttons, sealed under a shield
Warranty
Lifetime

Weighing flour instead of scooping it is the change that improves home baking most, and the Escali Primo is the scale most often recommended for it. It holds up to 11 pounds, or 5,000 grams, and reads in 1 gram steps in grams, ounces or pounds and ounces.

It runs on two buttons, on and tare, and the display and controls sit under a sealed shield, so flour and spills wipe off rather than getting inside. It turns off after four minutes idle, and Escali backs it with a lifetime warranty.

Skip it for a baker who already weighs everything; they own a scale. For a bread baker who needs to measure small amounts of salt and yeast, a second scale reading in 0.1 grams is the upgrade.

The catch. One gram is too coarse for weighing a few grams of yeast or salt with real precision.

Nordic Ware Naturals Round Cake Pan, 9-Inch 2-Pack

For the layer-cake bakerNo. 3

Nordic Ware Naturals Round Cake Pan, 9-Inch 2-Pack

Our take. A pair of plain aluminum cake pans that bake evenly and last, from the Minneapolis maker of the Bundt.

Made in
USA, of domestic and imported materials
Keeps for
Decades; bare aluminum does not rust and the rims resist warping
Material
Natural aluminum, uncoated
Size
9 in interior diameter, about 2.5 in deep
In the set
2 pans

Layer cakes need two pans the same size, and cheap dark nonstick pans brown the edges before the middle is set. Nordic Ware's Naturals pans are bare aluminum, which conducts heat evenly and gives pale, level layers. The rims are encapsulated so the pans do not warp.

Each pan is 9 inches across inside and about 2.5 inches deep, deep enough for a tall layer without spilling over. Nordic Ware makes them in the USA. Line them with a circle of parchment and a baker will turn out layers for years.

Bare aluminum should be washed by hand; the dishwasher dulls and discolors it. Skip these for someone who only makes sheet cakes and brownies.

The catch. Hand wash only if you want them to keep their finish, and there is no nonstick coating, so line the base.

J.K. Adams 12-Inch-by-2-3/4-Inch Maple Wood Medium Gourmet Rolling Pin

For pastryNo. 4

J.K. Adams 12-Inch-by-2-3/4-Inch Maple Wood Medium Gourmet Rolling Pin

Our take. A solid maple pin made in Vermont, with a steel axle and bearings so it rolls smoothly for years.

Made in
USA (Vermont)
Keeps for
Decades, with a little oil now and then
Barrel
12 x 2 3/4 in, maple
Axle
Full-length steel, self-lubricating bearings
Care
Hand wash, dry at once, oil occasionally
Guarantee
Lifetime, per the listing

J.K. Adams has turned wood in Vermont since 1944, and its Medium Gourmet pin is a classic handled rolling pin: a 12 inch maple barrel, 2 3/4 inches across, on a full-length steel axle with self-lubricating bearings. The barrel is waxed and the wood is North American maple.

A heavier handled pin does more of the work on firm pie dough and cookie dough than a thin French pin, which some bakers find easier for pastry. The 12 inch barrel handles a pie crust or a sheet of cookies without being awkward to store.

It must be hand washed and never soaked. Skip it for a baker who already rolls with a French pin and loves it; bakers rarely switch.

The catch. Handled pins are a matter of taste, and bakers who prefer a tapered French pin will not use it.

Lodge Cast Iron Combo Cooker, 3.2 Quart Deep Pot & 10.25 Inch Skillet Lid

The one to giveNo. 5

Lodge Cast Iron Combo Cooker, 3.2 Quart Deep Pot & 10.25 Inch Skillet Lid

Our take. The cast iron pot that sourdough bakers swear by: bake the loaf on the shallow half, with the deep half over it as the lid.

Made in
USA
Keeps for
Generations
Pieces
3.2 qt deep pot and 10.25 in skillet lid
Material
Cast iron, seasoned with vegetable oil
Heat
Stove, oven, grill or open flame
Care
Hand wash, dry, oil lightly

Bread bakes best in a closed pot for the first part of the bake, which traps steam and lets the loaf rise before the crust sets. The Combo Cooker is a 3.2 quart deep pot and a 10.25 inch skillet that fits over it as a lid. Bakers turn it upside down, dropping the dough into the shallow skillet and covering it with the pot, so there is no lowering a hot loaf into a deep pan.

It is Lodge's plain seasoned cast iron, made at the company's foundry in Tennessee, and it is as useful for a Tuesday stew or a steak as for bread. Lodge seasons it with vegetable oil, with no synthetic coating.

At about $60 it is the best-value serious bread tool there is. Skip it for someone who bakes large loaves; the 3.2 quart pot suits an everyday round loaf, and a big batard is a tight fit.

The catch. Heavy, and the round shape suits boules rather than long loaves.

Challenger Bread Pan Cast Iron Loaf Pan with Lid for Artisan Sourdough and Homemade Bread Baking

If money is no objectNo. 6

Challenger Breadware Challenger Bread Pan Cast Iron Loaf Pan with Lid for Artisan Sourdough and Homemade Bread Baking

Our take. A 20 pound cast iron pan built only for bread, with room for a long loaf and handles made for oven mitts.

Made in
USA
Keeps for
Generations
Size
15.5 x 10.5 x 5.5 in
Weight
20 lb
Oven limit
500 F
Seasoning
Grapeseed oil, pre-seasoned

The Challenger was designed by bakers for the one job. Its base is shallow, so dough goes in without reaching into a hot pot, and its tall lid sits over the loaf to hold steam. It measures 15.5 by 10.5 inches, big enough for a long batard or two small loaves, and it is rated to 500 degrees.

It comes pre-seasoned with grapeseed oil. The maker suggests inverting the lid into the base partway through the bake to protect the bottom of the loaf. The handles are shaped for thick oven mitts, which matters with 20 pounds of hot iron.

This is a gift for someone who already bakes bread every week and knows why they want it. Skip it for a beginner, and check that the pan fits their oven; it is large.

The catch. Heavy, expensive and single-purpose; it earns its price only for a weekly bread baker.

Matching the gift to the baker

For a new baker, the scale is the gift that will change their results most. For a sourdough baker, the Combo Cooker, or the Challenger if they already have a pot. For someone who makes birthday cakes and pies, the cake pans and the rolling pin.

Pairing

The scraper and the scale together make a good gift under $40. Add a bag of good bread flour to the Combo Cooker and the recipient can bake the same weekend.

What to skip

Novelty pans, cookie cutter sets in shapes for one holiday, dark nonstick cake pans that brown the edges, and cups-based measuring sets for someone who should be weighing.

Frequently asked questions

What is the best gift for someone who bakes sourdough?

A cast iron pot that holds steam. The Lodge Combo Cooker is about $60 and widely used for sourdough; the Challenger Bread Pan is the larger, dedicated option at about $300.

Why do bakers want a kitchen scale?

Weighing ingredients is far more accurate than cups, especially for flour. The Escali Primo reads in 1 gram steps up to 5,000 grams.

Are aluminum cake pans better than nonstick?

For layer cakes, many bakers prefer bare aluminum, which heats evenly and does not over-brown the edges. Line the base with parchment instead of relying on a coating.

Can the Lodge Combo Cooker go in a very hot oven?

Yes. It is plain cast iron with no plastic parts or coating, and Lodge rates it for the oven, stove, grill and open flame.

What is a good gift for a baker under $25?

A bench scraper, the Escali Primo scale, or a pair of Nordic Ware Naturals cake pans.
