The hot chocolate bar for a winter gathering

A hot chocolate bar is the easiest winter party there is. The work is done before anyone arrives: a big batch made on the stove, poured into something that will keep it warm, and set out with mugs and a line of toppings. Guests ladle their own, add what they like, and come back for a second. It suits a tree-trimming afternoon, a sledding day, the hour after a school concert.

The pieces are few. A vessel that holds a gallon or more and keeps it hot without scorching. A frother for anyone who wants theirs foamed. Mugs that show off the whipped cream and do not burn small hands. Jars with lids for marshmallows, shaved chocolate and crushed peppermint. A ladle that pours without dribbling down the side of the pot.

Below are six, from a $15 ladle to a $129 machine from a British chocolate maker for the house that takes hot chocolate seriously.

How we chose

  1. Holds warmth for hours. A pot with a warm setting, so the chocolate is as good at four o'clock as at two.
  2. Self-service. Everything on the bar can be used by a guest, including a child, without the host stepping in.
  3. Safe to hold. Mugs that stay cool on the outside and a ladle with a proper spout.
  4. Useful the rest of the year. A slow cooker for stews, a frother for coffee, jars for the pantry.

The 6 picks, in detail

Crock-Pot 7-Quart Manual Slow Cooker, Stainless Steel

Best overallNo. 1

Crock-Pot 7-Quart Manual Slow Cooker, Stainless Steel

Our take. A plain 7 quart slow cooker with a warm setting, which is all a gallon of hot chocolate needs.

Keeps for
Many years; the stoneware insert outlasts the heating base
Capacity
7 qt
Settings
High, low, warm
Insert
Removable stoneware, oven safe to 400°F
Care
Insert and lid dishwasher safe

A slow cooker is the right vessel for a hot chocolate bar because of its warm setting. Make the chocolate on the stove, where it heats quickly and evenly, then pour it into the slow cooker on warm. It stays at drinking temperature for the whole afternoon, and the lid keeps a skin from forming between visits.

This is Crock-Pot's basic 7 quart model: a stainless exterior, a removable stoneware insert, and three settings, high, low and warm. Seven quarts holds a gallon and a half of hot chocolate with room to ladle. The insert and lid go in the dishwasher, and the insert can go in the oven up to 400 degrees, so it also bakes and serves the rest of the year.

The manual dial has no timer, which is fine here; hot chocolate is watched, not left overnight. Anyone who wants programmable control for stews should look at Crock-Pot's timer models, which cost a little more.

The catch. Milk scorches at the edges if left on high; keep it on warm and stir now and then.

Instant Pot 4-in-1 Milk Frother, 10 oz, Black

The frotherNo. 2

Instant Pot 4-in-1 Milk Frother, 10 oz, Black

Our take. A countertop frother that makes warm or cold foam, or just heats milk, for the guest who wants a topping of foam.

Keeps for
A few years; small appliance with a replaceable whisk
Programs
Cold foam, light warm foam, dense warm foam, warm milk
Capacity
Froths 8.5 oz, heats 17 oz
Exterior
Cool touch
Care
Dishwasher-safe lid and whisk
Power
500 W

Some guests want their hot chocolate topped with foam rather than whipped cream, and a jug frother on the bar makes that a self-service job. Instant Pot's 4-in-1 has four programs: cold foam, light warm foam, dense warm foam, and warm milk with no foam. It is operated with two buttons, which children can manage.

It froths up to 8.5 ounces or heats up to 17, and the outside stays cool to the touch. The lid and whisk go in the dishwasher. The warm-milk setting is useful for a guest who wants a dairy-free cup: heat oat milk in the frother and stir in shaved chocolate from the jars.

Skip it if nobody in your house drinks lattes; for a single winter afternoon, whipped cream in a bowl does the same job.

The catch. It makes one or two servings at a time, so a line can form at a busy party.

Bodum 10oz Bistro Double Wall Insulated Mug, Set of 6, Clear

The mugsNo. 3

Bodum 10oz Bistro Double Wall Insulated Mug, Set of 6, Clear

Our take. Six double-walled glass mugs that show the chocolate and the cream and stay cool enough for small hands.

Keeps for
Years with care; mouth-blown glass is lighter and more fragile than stoneware
Count
6 mugs
Capacity
10 oz
Material
Mouth-blown borosilicate glass, double wall
Care
Dishwasher safe

Hot chocolate is the one hot drink that looks good, and a clear mug shows it off: the dark chocolate, the layer of foam, the marshmallows on top. Bodum's Bistro mugs are double-walled, so the chocolate appears to float and the outside stays near room temperature. That second property is the practical one when children are carrying their own cups.

They are 10 ounces, mouth-blown from heat-resistant borosilicate glass, and dishwasher safe. Ten ounces is the right size for hot chocolate, which is rich; a larger mug goes cold before it is finished.

Double-wall glass is light and thinner than it looks, and a hard knock on a stone counter can crack it. For a houseful of young children, a stoneware mug is the safer choice.

The catch. Breakable, and a broken double-wall glass cannot be repaired; count on replacing one now and then.

Bormioli Rocco Quattro Stagioni 5 oz. Canning Jar, Set of 12

The topping jarsNo. 4

Bormioli Rocco Quattro Stagioni 5 oz. Canning Jar, Set of 12

Our take. Twelve small Italian glass jars with gold lids, the right size for a row of toppings and a pantry afterward.

Made in
Italy
Keeps for
Decades for the glass; lids are replaceable
Count
12 jars
Capacity
5 oz
Size
3 x 3 x 3.25 in
Lids
Gold screw lids

Toppings are what make it a bar: mini marshmallows, shaved dark chocolate, crushed peppermint, cinnamon, a jar of flaky salt for the adults. Each wants its own small container with a spoon, and a lid so the leftovers keep.

Bormioli Rocco's Quattro Stagioni jars are a favorite of Italian home cooks for preserving. These are 5 ounces, about 3 inches square and 3.25 inches tall, with gold screw lids and the embossed fruit motif the range is known for. They are made in Italy and dishwasher safe. Twelve is enough for a bar of six toppings with a second set refilled and waiting.

Afterward they go to the pantry for spices, or to the kitchen for jam and small food gifts, which is the point of buying good jars over party containers.

The catch. The mouth is narrow for a large serving spoon; use small spoons or demitasse spoons.

OXO Good Grips Stainless Steel Soup Ladle with Pour Spout

The ladleNo. 5

OXO Good Grips Stainless Steel Soup Ladle with Pour Spout

Our take. A stainless ladle with spouts on both sides, so hot chocolate goes into the mug and not down its side.

Keeps for
Years; stainless steel with a rubberized grip
Material
Stainless steel
Spouts
Two, for right or left hand
Grip
Soft, non-slip
Care
Dishwasher safe

A round ladle poured into a mug leaves a drip down the outside every time, and on a self-service bar that is a sticky counter by the second hour. OXO's ladle has a pour spout on each side of the bowl, one for right-handed guests and one for left, and an angled head that keeps the liquid in while it is lifted.

It is stainless steel with OXO's soft non-slip grip, which stays secure with a wet or chocolatey hand, and it goes in the dishwasher. The handle is long enough to reach the bottom of a 7 quart slow cooker.

It is a kitchen ladle, polished enough for the table but not a serving piece. A host who wants silver on the bar should look at a punch ladle instead.

The catch. The rubberized handle looks like a kitchen tool, not tableware.

Hotel Chocolat Velvetiser Classic Hot Chocolate Maker, Charcoal Edition

If money is no objectNo. 6

Hotel Chocolat Velvetiser Classic Hot Chocolate Maker, Charcoal Edition

Our take. A countertop machine from a British chocolate maker that whisks real chocolate flakes and milk into two cups in under three minutes.

Keeps for
Several years; covered by a 12 month parts and labor guarantee
Time
About 2.5 minutes per batch (maker's figure)
Whisk
Magnetic, removable, dishwasher safe
Body
Double-skinned metal, dual spout
Includes
2 PodCups
Guarantee
12 months parts and labor

The Velvetiser is a modern chocolatière. Milk goes in with flakes of real chocolate rather than cocoa powder, a button is pressed, and a magnetic whisk modeled on the molinillo, the traditional wooden chocolate whisk, heats and froths the two together. Hotel Chocolat says it takes about two and a half minutes, and the result is thicker and smoother than a stirred pot.

The body is double-skinned metal to hold the heat, with a spout on each side and a cast-iron handle. The whisk comes out and goes in the dishwasher, and the jug is cleaned by running water and a drop of soap through a cycle. It comes with two ceramic cups.

It makes a couple of cups at a time, so it is the host's own machine rather than the engine of a party for twenty. Buy it for a household that drinks hot chocolate every winter evening, and use the slow cooker for the crowd.

The catch. Small batches only, and it is designed around Hotel Chocolat's own flakes, which cost more than cocoa.

Compared.

Every comparison

How much to make

Count on two 8 ounce cups per guest over an afternoon, less for small children. A gallon is sixteen cups, enough for eight adults. For twenty people, make two gallons and keep the second on the stove at the lowest heat to refill the slow cooker.

For toppings, a cup of each per ten guests is generous. Mini marshmallows go fastest.

Timing it

Make the chocolate on the stove within the hour before guests arrive, whisking the chocolate into hot, not boiling, milk. Pour it into the slow cooker on warm, put the lid on, and stir every half hour so nothing settles.

Fill the jars and set out the mugs the night before. Whip cream at the last minute and keep it in a bowl in the refrigerator, bringing out a small amount at a time.

What to skip

Packets of instant mix for a party; real chocolate melted into milk costs little more. A slow cooker on high for hours, which scorches the milk. Candy canes left whole in the jar, which nobody can get out.

Frequently asked questions

Can you keep hot chocolate warm in a slow cooker?

Yes. Make it on the stove, pour it in, and hold it on the warm setting with the lid on, stirring now and then.

How much hot chocolate for 20 people?

About two gallons, or two 8 ounce cups per adult. Children drink less.

What toppings should a hot cocoa bar have?

Mini marshmallows, whipped cream, shaved chocolate and crushed peppermint cover most tastes. Cinnamon and flaky salt are good for adults.

What mugs are best for hot chocolate?

Something around 8 to 10 ounces. Double-wall glass stays cool to hold and shows off the toppings.

Is a Velvetiser worth it for a party?

Not as the main source. It makes a couple of cups at a time. It is a machine for everyday use at home.
