ThermoWorks rates the Thermapen ONE at a one-second reading and 0.5 degree accuracy, and each one ships with a NIST-traceable calibration certificate. The display rotates for left or right hands, lights up when you open the probe and is IP67 waterproof.
A fast thermometer changes cooking more than any pan. Chicken comes off the heat when it is done rather than when it is safe to be sure, and bread, caramel and steak stop being judgment calls. For a good cook, it removes the last bit of doubt.
Skip it for a cook who already owns a Thermapen of any generation; the older ones are still very good. ThermoWorks backs the ONE for five years.
The catch. About $125 for a thermometer; a ThermoPop from the same maker does most of the job for far less.
