Hosting New Year's Eve at Home: What You Need

New Year's Eve at home asks for more of a few things than any other night: more glasses, more cold, more light. Six pieces that cover it.

What to own to host New Year's Eve at home

Most parties can be hosted with what is already in the cupboard. New Year's Eve is the exception, because of one moment: at midnight, every guest needs a glass of something cold and sparkling in hand at the same time. A household of four owns four flutes. A party of fourteen needs fourteen, plus spares, plus somewhere to keep the bottles cold and a way to save what is left after the toast.

The rest of the evening is small food and low light. Plates the size of a hand, so guests can hold one with a glass. Candles that last from the first arrival past midnight without anyone having to relight them.

The six pieces below are bought for quantity and for the one night, but none of them is disposable. The flutes go on to Sunday mimosas, the bucket to summer rosé, the small plates to every dessert course after. We have left out the champagne sabre. It is a party trick with real risk in a living room, and a bottle opened with a quiet twist pours exactly the same.

How we chose

  1. Sold in quantity. Glasses and plates that come by the dozen at a sensible price, so a party of twelve does not mean twelve separate purchases.
  2. Holds the cold. A bucket big enough for a bottle and plenty of ice and water, which is how champagne is chilled properly.
  3. Useful after January 1. Every piece has a job for the rest of the year, from brunch to the dessert course.
  4. Dishwasher tolerant. On January 1 nobody wants to hand-wash two dozen glasses.

We read makers’ specifications, warranties, care instructions and the sources listed at the end. We do not accept paid placements. How we choose

The 6 picks, in detail

Libbey 7500 Vina Stemmed Flute Glasses Set, 8 Oz, Set of 12

Libbey 7500 Vina Stemmed Flute Glasses Set, 8 Oz, Set of 12

Libbey has made glass for American restaurants and bars for well over a century, and the Vina flute is from that side of the business. The set is twelve tall stemmed flutes, 8 ounces each, with a narrow rim that keeps the bubbles longer and a lightly beaded edge that Libbey says helps the glass last. They are sold as dishwasher safe, which matters on January 1.

Twelve at once is the reason to buy them. At about $5 a glass, a host can own enough for a real party without spending crystal money on glasses that will be handed to guests who are also holding a plate and talking. If one breaks at midnight, nobody minds.

Skip them if your New Year's Eve is dinner for six. At that size, buy fewer and better glasses, and our champagne glass guide covers those.

The catch. Restaurant glass is thicker at the rim than fine crystal, and it feels it.

Elegance Hammered Stainless Steel Doublewall Champagne Bucket, 9", Silver

The bucketNo. 2

Elegance Hammered Stainless Steel Doublewall Champagne Bucket, 9", Silver

Our take. A double-walled hammered steel bucket that holds ice longer and does not leave a wet ring on the table.

Keeps for
Decades; stainless steel with nothing to break

The Comité Champagne, the trade body for the region, recommends chilling a bottle in an ice bucket half filled with ice and water for 20 to 30 minutes before serving, which brings it to about 46 to 50 degrees. Ice and water together, not ice alone, is what does the work, so the bucket has to be deep enough to take a standing bottle and the slush around it.

This one is 9 inches tall and 9 inches across the top, in hammered stainless steel with a double wall. The double wall is the useful part: the outside stays near room temperature, so it does not bead with condensation and drip onto a wooden sideboard, and the ice inside lasts longer.

One bucket holds one bottle comfortably, two at a squeeze. For a big party, keep the reserve bottles in the refrigerator and rotate them through the bucket, rather than buying three buckets.

The catch. No handles, so it is carried by the rim with a towel, and it is not large enough for more than two bottles.

Rabbit Champagne and Wine Sealer, Velvet Black

The stoppers, about $8 eachNo. 3

Rabbit Champagne and Wine Sealer, Velvet Black

Our take. A simple clamp-down sealer that fits standard wine and champagne bottles and keeps the fizz for days.

Keeps for
Years; the rubber gasket is the part that wears
Type

After midnight there are always half bottles. The Rabbit sealer sits on the neck and twists down, pressing a rubber gasket into the opening, and Rabbit says it holds tight enough to store the bottle on its side without leaking. The maker claims a week or more of freshness. For New Year's Day, the next morning is all that matters.

It fits standard wine bottles as well as champagne, so it earns its drawer space the rest of the year. Buy three or four for a party. They are cheap enough that there is no reason to pour a good bottle down the sink.

The Comité Champagne notes that an open bottle does not keep for long whatever you use. Treat any stopper as a day or two, not a month.

The catch. The maker's week-long freshness claim is generous for sparkling wine; plan to finish it the next day.

10 Strawberry Street 6" Catering Round Appetizer Plate, Set of 12, White

The small platesNo. 4

10 Strawberry Street 6" Catering Round Appetizer Plate, Set of 12, White

Our take. Twelve plain white 6 inch rimmed plates, oven and dishwasher safe, for under $2 each.

A New Year's Eve is eaten standing up, from a plate in one hand while the other holds a glass. That rules out dinner plates. Six inches is the right size: big enough for two or three bites and a napkin, small enough to hold without a wrist ache.

These come from 10 Strawberry Street's catering line, twelve to a box, in plain white ceramic with a narrow rim to catch a sauce. They are listed as microwave, dishwasher and oven safe to 500 degrees, so a batch of warm bites can go out on them straight from the oven.

Plain white is the point. They go under anything, stack neatly in a cupboard for the rest of the year, and serve as bread plates or dessert plates at the next dinner.

The catch. Catering-grade ceramic, not porcelain; it is heavier and plainer than fine china.

Root Candles Unscented Votive Candles Beeswax Blend 20-Hour Votives, 18-Pack, White

The candlesNo. 5

Root Candles Unscented Votive Candles Beeswax Blend 20-Hour Votives, 18-Pack, White

Our take. Eighteen unscented beeswax-blend votives that burn through the whole night without a relight.

Made in
USA (Medina, Ohio)
Keeps for
About 20 hours per votive (maker's figure)
Count
18 votives
Burn time
About 20 hours each (maker's figure)
Wax
Beeswax blend, unscented
Wick
Lead-free cotton

Root has made candles in Medina, Ohio, since 1989, and its votives are a beeswax blend with a lead-free cotton wick. The maker rates each one at about 20 hours, which is the useful number: light them at eight and they are still going at breakfast if you forget them, which you should not.

Unscented matters at a party. Food and wine are in the room, and a scented candle on every surface competes with both. Eighteen votives is enough to line a mantel, a sideboard and the bar with a few left over.

They need votive holders, and a votive melts into a liquid pool as it burns, so a holder is not optional. Plain glass holders are inexpensive and are the right look for this.

The catch. Holders are sold separately, and a votive burned without one leaves a puddle of wax.

Zwiesel Glas Pure Champagne Glass (Set of 6), 7.1 Ounce

If money is no objectNo. 6

Zwiesel Glas Pure Champagne Glass (Set of 6), 7.1 Ounce

Our take. Angular German crystal flutes with an effervescent point, for a host who wants fine glass even in quantity.

Made in
Germany
Keeps for
Many years; Tritan crystal is made to survive the dishwasher
Count
6 flutes
Capacity
About 7.1 oz
Height
9.9 in
Material
Tritan crystal, effervescent point
Care
Dishwasher safe

Zwiesel's Pure line has the squared-off shoulders that make it recognizable across a room. The flute holds about 7.1 ounces and stands close to 10 inches tall, with an effervescent point etched into the bottom of the bowl. That point gives the bubbles somewhere to form, so the glass shows a steady column of fine bead from the base.

The glass is Tritan crystal, made in Germany. Zwiesel's pitch for Tritan is that it is strong enough for restaurant use and the dishwasher, which is what lets a host set out a dozen of these at a party without wincing at every clink.

Two sets of six cost about as much as three sets of the Libbey flutes. Buy these if the party is smaller and more formal, or if you want the glasses to be one of the reasons people remember the night.

The catch. Tall and narrow at nearly 10 inches, they need a top rack with clearance and a steady hand in a crowd.

Compared.

Every comparison

How much to buy

A 750 milliliter bottle pours about six glasses of 4 ounces. For the midnight toast alone, count one bottle for every six guests. For a whole evening where sparkling wine is the main drink, count a bottle for every two or three guests.

Own one flute per guest plus two or three spares; someone always sets a glass down and loses it. Plates run faster than glasses: plan on two small plates per guest over an evening.

Timing the cold

Put the bottles for midnight in the refrigerator in the afternoon. At 11:30, move the first two into the bucket with ice and water; the Comité Champagne suggests 20 to 30 minutes in the bucket to reach serving temperature.

Keep a second tray of ice in the freezer for a refill. The bucket will need it by 1 a.m.

What to skip

The sabre. It is dramatic in a vineyard and a hazard in a living room full of people. Plastic flutes, which make good wine taste like a picnic. Scented candles near the food.

Frequently asked questions

Flutes or coupes for New Year's Eve?

Flutes, for a standing party. They hold the bubbles longer and are harder to spill in a crowd. Coupes are lovely at a seated table.

How many bottles of champagne for 12 people?

Two bottles cover the midnight toast. For an evening where sparkling wine is the main drink, plan on four to six.

How cold should champagne be?

About 46 to 50 degrees Fahrenheit, according to the Comité Champagne. Colder than that and the aromas close up.

Do champagne stoppers work?

A good clamp-down sealer keeps the bubbles for a day or two. Nothing keeps an open bottle of sparkling wine for weeks.

Should I buy a champagne sabre?

No. A bottle opened by holding the cork and turning the bottle pours the same, and nobody loses an eye.
