The verdict

Which to buy.

Buy the Caraway if you want a slick ceramic pan for eggs, fish and vegetables, cook on low to medium heat and do not mind washing by hand. Buy the HexClad if you want a tougher pan that takes metal tools, the dishwasher and high oven heat, and accept that it releases food less freely.
HexClad vs Caraway: a hybrid pan or a ceramic one

HexClad and Caraway are usually shortlisted together because both say their nonstick is free of PTFE and PFAS. Underneath that claim they are very different objects. HexClad builds a tri-ply stainless pan with an aluminum core and covers the cooking surface with a laser-etched grid of raised steel hexagons, with its TerraBond ceramic coating in the valleys between them. Caraway makes an aluminum pan with a smooth ceramic coating over the whole cooking surface and a stainless steel plate on the base for induction.

That difference decides almost everything else. The HexClad tolerates metal spatulas, the dishwasher and a 900 degree oven, because the steel ridges take the wear. The Caraway releases eggs more readily, because nothing interrupts the coating, but the maker asks for low to medium heat, a little oil, no aerosol sprays and hand washing only. Caraway's warranty runs one year. HexClad's runs for life on pans it sells itself.

Below are the 12 inch pans with lids side by side, then the two sets, since many shoppers are choosing a whole kitchen rather than one pan. Two alternatives follow: a cheaper ceramic pan that independent testing rates highly, and a bare steel pan with nothing to wear out. Our Is HexClad worth it guide covers the history of HexClad's coating in more detail.

How we chose

  1. What the surface does. Release, searing and tolerance for metal and high heat, from the makers' own ratings and independent testing where it exists.
  2. Care it demands. Heat limits, dishwasher rules and utensil guidance from the listings and the makers' care pages, since a ceramic coating lasts only as long as it is looked after.
  3. Warranty. What each maker will stand behind, and for how long.
  4. Who sells it. Every pick is sold on Amazon US by the maker itself or by Amazon.com.

We read makers’ specifications, warranties, care instructions and the sources listed at the end. We do not accept paid placements. How we choose

AThe HexClad

HexClad

HexClad 12" Hybrid Nonstick Frying Pan with Lid

A heavy tri-ply pan that tolerates metal, the dishwasher and high oven heat, at the cost of some release.

HexClad 12" Hybrid Nonstick Frying Pan with Lid
Keeps for
The tri-ply body lasts; the coating in the valleys wears with use
Surface
Stainless hexagons over TerraBond ceramic nonstick
Body
Tri-ply, aluminum core; induction compatible
Size
About 12 in across, 2 in high, about 4 lb (maker)
Oven
Pan to 900°F per the listing; glass lid lower
Care
Dishwasher-friendly; metal utensil safe
Warranty
Lifetime against manufacturer's defects, when sold by HexClad

The listing, sold on Amazon by HexClad, describes a tri-ply pan with an aluminum core and a laser-etched hexagonal surface of stainless steel and TerraBond ceramic coating. It works on induction, is rated metal-utensil safe and dishwasher-friendly, and the pan is oven safe to 900 degrees Fahrenheit, with the included glass lid rated lower. HexClad gives the pan as about 12 inches across, 2 inches high and about 4 pounds, and asks owners to season it before first use.

Independent testing is split. America's Test Kitchen rated the 12 inch pan not recommended among nonstick skillets because eggs stuck, which it put down to the bare steel hexagons, though it seared meat well. Consumer Reports rated a HexClad hybrid very good at releasing eggs and excellent at surviving steel wool. Neither review states which version of the coating it tested.

Buy it if one durable pan for most jobs matters more than the slickest release. Skip it if eggs and delicate fish are most of what you cook; a smooth coated pan does that better.

The catch. Not as slick as a fully coated pan in America's Test Kitchen's testing, and the coating is still the part that ages.

BThe Caraway

Caraway

Caraway 12" Non-Stick Ceramic Frying Pan with Glass Lid

A smooth, fully coated ceramic pan that releases food easily, for cooks willing to keep the heat moderate and wash by hand.

Caraway 12" Non-Stick Ceramic Frying Pan with Glass Lid
Keeps for
A few years of regular use; ceramic release fades with time and heat
Surface
Ceramic nonstick, full coverage
Coating
Made without PTFE, PFOA, PFAS, lead or cadmium (maker's claim)
Body
Aluminum, stainless steel base plate; induction compatible
Oven
To 550°F per the listing
Care
Hand wash only; low to medium heat (maker)
Warranty
One-year limited (US)

Caraway describes its cookware as an aluminum body with a ceramic-coated cooking surface and stainless steel handles and base plate. The listing, sold by Caraway Home, says the coating is free of PTFE, PFOA, PFAS, lead and cadmium, that the pan works on induction, gas and electric, and that it is oven safe to 550 degrees Fahrenheit. This is the 12 inch pan sold with a glass lid; the same pan without a lid is about $135.

The rules matter more here than with the HexClad. Caraway's own care advice is to cook on low to medium heat, use a little oil or butter rather than none, avoid aerosol cooking sprays, and wash by hand only, because the dishwasher is hard on the coating. The listing does not rate it for metal utensils.

Buy it for eggs, pancakes, fish and vegetables, and for a pan that looks good on the stove. Skip it if you sear steaks at high heat, reach for a metal spatula, or want the dishwasher to do the work. Its one-year warranty is short for a $200 pan.

The catch. Asks for gentle heat and hand washing, and the warranty is only one year.

Also 01If you are buying the Caraway set

Caraway

Caraway 12-Piece Non-Stick Ceramic Cookware Set

Four coated pieces with lids and storage, for a kitchen that cooks gently and wants everything to match.

Caraway 12-Piece Non-Stick Ceramic Cookware Set
Keeps for
A few years of regular use per piece, as with any ceramic coating
Pieces
10.5 in fry pan, 3 qt saucepan, 4.5 qt saute pan, 6.5 qt Dutch oven, 3 lids
Storage
4 magnetic pan racks, canvas lid holder
Oven
To 550°F per the listing
Care
Hand wash only (maker)
Warranty
One-year limited (US)

The set is what most people mean by Caraway. Per the listing it holds a 10.5 inch frying pan, a 3 quart saucepan with lid, a 4.5 quart saute pan with lid and a 6.5 quart Dutch oven with lid, plus four magnetic pan racks and a canvas lid holder. Everything is oven safe to 550 degrees Fahrenheit and works on induction. Caraway lists the 10.5 inch pan at 2.7 pounds.

The storage is a real advantage in a small kitchen. The limitation is that every piece is coated, so the same care rules apply to the stockpot as to the egg pan, and there is no bare steel pan for hard searing. A 12 inch skillet is not included.

The catch. Every piece is coated and every piece wears; there is nothing in the set for high-heat searing.

Also 02If you are buying the HexClad set

HexClad

HexClad Hybrid Nonstick 14-Piece Cookware Set

Three pans and three pots, all with lids, built to take metal tools and the dishwasher.

HexClad Hybrid Nonstick 14-Piece Cookware Set
Keeps for
The bodies last; the coating wears with use
Pieces
8, 10 and 12 in pans; 2, 3 and 8 qt pots; 6 lids; 2 trivets
Body
Tri-ply, aluminum core; induction compatible
Oven
To 900°F per the listing; glass lids lower
Care
Dishwasher-friendly; hand washing recommended
Warranty
Lifetime against manufacturer's defects, when sold by HexClad

The listing, sold by HexClad, includes 8, 10 and 12 inch pans with lids, 2, 3 and 8 quart pots with lids, and two silicone trivets. Every piece has the hybrid surface and tri-ply aluminum-core body, works on induction, and carries the same oven and dishwasher ratings as the single pan. HexClad recommends hand washing even though the pieces can go in the dishwasher.

It costs about $145 more than the Caraway set and includes a 12 inch skillet, which the Caraway set lacks. It has no storage system. The case for it is durability under careless use; the case against it is that a hybrid surface on a stockpot adds little, since soups and pasta water do not stick to bare steel either.

The catch. Expensive for pots that would cook just as well in plain stainless steel.

Also 03The cheaper ceramic pan

GreenPan

GreenPan Valencia Pro 12" Ceramic Nonstick Frying Pan, Hard Anodized

America's Test Kitchen's favorite ceramic skillet, for well under half the price of either pan above.

GreenPan Valencia Pro 12" Ceramic Nonstick Frying Pan, Hard Anodized
Keeps for
A few years; ceramic slickness fades sooner than PTFE
Coating
Ceramic; free of PFAS, PFOA, lead and cadmium (maker's claim)
Body
Hard-anodized aluminum, induction base
Oven and broiler
To 600°F; lids to 425°F
Care
Dishwasher safe; metal utensil safe (maker's rating)

Valencia Pro is hard-anodized aluminum with an induction base and a ceramic coating GreenPan says is free of PFAS, PFOA, lead and cadmium. The listing rates it metal-utensil safe, dishwasher safe, and oven and broiler safe to 600 degrees Fahrenheit, with lids to 425. America's Test Kitchen named the 12 inch pan its winner among ceramic nonstick skillets and noted it runs hotter than traditional nonstick.

If the Caraway appeals because it is ceramic, this is the same idea with independent testing behind it, at a price that makes replacing it in a few years less painful.

The catch. Runs hot, and like all ceramic it loses release over time.

Also 04If you want no coating at all

All-Clad

All-Clad D3 Stainless Steel 12" Fry Pan, Made in the USA

Bare tri-ply stainless that sears better than either pan here and has nothing to wear out.

All-Clad D3 Stainless Steel 12" Fry Pan, Made in the USA

USA (Pennsylvania), with global components
Keeps for
Generations
Construction
Tri-ply: stainless, aluminum core, fully bonded
Oven and broiler
Safe to 600°F
Cooktops
All, including induction
Care
Hand wash only

D3 is All-Clad's original bonded tri-ply, stainless inside and out around an aluminum core. It is oven and broiler safe to 600 degrees Fahrenheit, works on induction, and America's Test Kitchen has named it its winner among stainless skillets.

Food sticks to bare steel until you learn to preheat and use fat, and it is hand wash only. Paired with an inexpensive ceramic pan for eggs, it covers everything either set attempts. Our All-Clad vs HexClad comparison sets it against the hybrid directly.

The catch. No release to speak of until the pan is preheated and oiled properly.

More head to heads.

Every comparison

Set or single pan

The 12 inch skillet does most of the work in most kitchens. Saucepans and stockpots hold liquid, and liquid does not stick, so a coated stockpot is paying for a feature it rarely uses. A single good pan from either brand, added to plain stainless pots you may already own, costs far less than either set.

The Caraway set makes the most sense in a first kitchen that has nothing yet and little cupboard space. The HexClad set makes the most sense for a cook who wants every piece to survive the dishwasher.

Making a ceramic coating last

Ceramic coatings lose their release faster than traditional PTFE nonstick, in America's Test Kitchen's testing, and heat speeds that along. Keep the burner at medium or below, use a little oil or butter, skip aerosol sprays, which leave a residue that builds up, and wash by hand with a soft sponge.

When eggs start to stick despite all that, the coating is worn. That is the expected end of a coated pan, not a defect, and neither warranty covers ordinary wear.

Buying on Amazon

Both brands sell through their own Amazon storefronts. HexClad's lifetime warranty applies only to products sold by HexClad, and Caraway's warranty covers products bought from Caraway or its authorized retailers, so check the seller before you buy from a cheaper listing.

Frequently asked questions

Is HexClad or Caraway better?

For release, Caraway's smooth ceramic surface is the more nonstick of the two. For durability, heat and the dishwasher, HexClad is tougher and carries a lifetime warranty against defects when bought from HexClad. Caraway's warranty is one year.

Are HexClad and Caraway non-toxic?

Both makers say their current coatings are free of PTFE and PFAS. HexClad's earlier pans used a PTFE-based coating, so a secondhand HexClad may differ from a new one. Caraway says its coating is also free of PFOA, lead and cadmium.

Can Caraway pans go in the dishwasher?

No. Caraway says hand wash only, because the dishwasher is hard on the ceramic coating. HexClad describes its pans as dishwasher-friendly but still recommends washing by hand.

Can you use metal utensils on Caraway?

Caraway's listing does not rate its pans for metal utensils, so use wood, silicone or nylon. HexClad's listing rates its pans metal-utensil safe.

Is the Caraway cookware set worth it?

It is a good-looking, well-organized set for gentle cooking, at about $445. Every piece is coated, so it wears like nonstick, and it has no 12 inch skillet. A single ceramic pan plus plain stainless pots covers the same ground for less.
