The Best Steak Knives (2026): Serrated vs Straight Edge

A steak knife has one job, and most of them do it badly: they saw at the meat and squeeze out the juice. The argument is mostly about the edge, serrated or straight, and it has a clear answer for most households.

The steak knives that cut instead of tear

Most houses have steak knives that came free with a knife block, and they are rarely taken out, which is a shame. A good steak knife makes a real difference at the table, and what separates it from a poor one is the edge and the steel, not the price. It slices cleanly through a crust and leaves a smooth face on the meat, rather than tearing the fibers and pushing the juice onto the plate.

The first decision is the edge. A serrated or wavy edge stays usable for years without sharpening, because the points do the cutting and the hollows are protected from the plate. It saws a little, and it cannot really be sharpened at home. A straight edge cuts more cleanly and can be honed and sharpened like any kitchen knife, but it dulls against china and has to be looked after. Straight edges are the choice of steakhouses that sharpen them. Serrated edges suit houses that never will.

The second decision is care. Wood handles and the best forged knives want hand washing. If the steak knives are going in the dishwasher regardless, buy ones made for it. We read the makers' specifications and sorted five sets from a Swiss workhorse to a forged German set that costs as much as a good chef's knife.

How we chose

  1. The right edge. Serrated for a household that will never sharpen, straight for one that will. Each pick says which it is.
  2. Steel that holds up. Stainless steel from makers who state the steel and hardening process, rather than unnamed alloy.
  3. Clear care rules. Dishwasher-safe where the maker says so, and a clear warning where it does not.
  4. Balance at the table. A handle that sits comfortably in the hand and a blade length of about 4 to 4.5 inches, long enough for a rib-eye without looking like a carving knife.

We read makers’ specifications, warranties, care instructions and the sources listed at the end. We do not accept paid placements. How we choose

The 5 picks, in detail

Wüsthof Gourmet 4-Piece Steak Knife Set

Best overallNo. 1

Wüsthof Gourmet 4-Piece Steak Knife Set

Our take. Straight-edged Solingen steak knives that slice cleanly and can be sharpened for life, at half the price of Wüsthof's forged sets.

Made in
Germany (Solingen)
Keeps for
Decades with honing; limited lifetime warranty
Edge
Straight, 4.5 in
Construction
Laser-cut, stamped high-carbon stainless steel
Handle
Triple-riveted synthetic
Care
Hand wash only
Warranty
Limited lifetime

Wüsthof has been making knives in Solingen since 1814 and is still family owned. The Gourmet line is laser-cut and stamped from a single piece of high-carbon stainless steel rather than forged, which makes it lighter and less expensive than the Classic range without changing the steel or where it is made.

These are straight-edged 4.5 inch knives, which is the better choice for anyone who eats steak often and keeps a honing steel in the kitchen. They slice rather than saw, leave a clean face on the meat, and can be sharpened back to new for decades. The handles are triple-riveted synthetic, made to resist fading, heat and impact.

Skip it if the knives will go in the dishwasher. Wüsthof says hand wash only, and a straight edge rattling against other cutlery will dull quickly. For a set that never gets sharpened, the Zwilling serrated set is the better buy.

The catch. Hand wash only, and a straight edge needs honing to stay sharp against china plates.

Victorinox Swiss Classic Tomato and Table Knife Set Serrated Blade, Black

The sensible entry pointNo. 2

Victorinox Swiss Classic Tomato and Table Knife Set Serrated Blade, Black

Our take. Six light, sharp, Swiss-made serrated knives that go in the dishwasher and cost less than one forged steak knife.

Set of 6

Victorinox, the Swiss Army knife maker, sells this as a tomato and table knife, and it is what many European households set out for steak and pizza. The blades are stainless steel with a fine wavy edge, the handles are lightweight polypropylene, and the set is Swiss made and dishwasher safe.

The wavy edge is the reason it works so well for so little. It bites through a charred crust and a tomato skin alike, and the points keep cutting for years because the edge between them rarely touches the plate. At about $6 a knife, it is also the set you do not mind a guest dropping in the bin by mistake.

Skip it if you want something that looks like tableware. The black plastic handles are practical, not handsome, and the knives are light enough to feel slight next to heavy silverware.

The catch. Plastic handles and a light build; practical rather than handsome on a dinner table.

Zwilling Twin Gourmet Steak Knives Set of 4, Friodur Ice Hardened Blades

The serrated one to buyNo. 3

Zwilling Twin Gourmet Steak Knives Set of 4, Friodur Ice Hardened Blades

Our take. Classic triple-riveted serrated steak knives from Zwilling, ice-hardened and dishwasher safe, at about $16 a knife.

Made in

Twin Gourmet is Zwilling's stamped line: each blade is cut from a single piece of the company's high-carbon no-stain steel and Friodur ice-hardened, a cold treatment Zwilling uses so the blade stays sharp and resists rust. The 4.5 inch blades are serrated, and the handles are the traditional black synthetic with three rivets.

This is the set for a household that wants a proper, weighty steak knife that can go in the dishwasher and never needs sharpening. Zwilling lists them as dishwasher safe and made in Spain, with a lifetime warranty.

Skip it if you want a clean slicing cut on a fine steak. A serrated edge always saws a little. And while the dishwasher will not ruin them, hand washing keeps the handles and edges looking better for longer.

The catch. Serrated, so it saws more than it slices, and the black riveted handle is a kitchen-knife look.

OPINEL No. 125 Bon Appetit Steak Knife Set of 4, Hornbeam (Countryside)

The bistro setNo. 4

OPINEL No. 125 Bon Appetit Steak Knife Set of 4, Hornbeam (Countryside)

Our take. The French bistro table knife: a straight Swedish-steel blade and a painted hornbeam handle, for a table that looks set rather than equipped.

Made in
France
Keeps for
Years, if kept out of the dishwasher
Edge
Straight (non-serrated), 11 cm
Steel
Sandvik 12C27 stainless
Handle
Painted hornbeam
Care
Hand wash; not for the dishwasher

Opinel has made knives in the French Alps since 1890, and the No. 125 Bon Appétit is its table knife. The 11 cm blade is Sandvik 12C27 stainless steel with a smooth, non-serrated edge, and the handle is varnished hornbeam, most of it from sustainably managed French forests. This set has painted handles in Opinel's Countryside colors.

The straight edge slices cleanly and can be touched up on a ceramic honing rod. It suits a household that eats steak as often as it eats roast chicken, cheese and charcuterie, because this is a table knife for all of them. The painted handles bring a little color to a white table.

Skip it if everything goes in the dishwasher. Opinel says not to, because the heat and water will damage the wooden handles. Opinel's Bon Appétit+ line, with serrated blades and dishwasher-safe handles, is the version for households that need it. This set is sold on Amazon by Kaviso Outdoors, Opinel's retail partner there.

The catch. Hand wash only, and a light, slim knife rather than a heavy steakhouse one.

Wüsthof Classic Ikon 4-Piece Steak Knife Set

If money is no objectNo. 5

Wüsthof Classic Ikon 4-Piece Steak Knife Set

Our take. Fully forged Solingen steak knives with a double bolster, balanced like a chef's knife and priced like one.

Made in
Germany (Solingen)

Straight (plain), 4.5 in
Construction
Forged from one piece of high-carbon stainless steel

Limited lifetime

Classic Ikon is one of Wüsthof's top forged lines. Each 4.5 inch blade is forged from a single block of high-carbon stainless steel, tempered to 58 HRC and edged with Wüsthof's laser-guided Precision Edge Technology, which the maker says is 20 percent sharper with twice the edge retention of its earlier edges. The edge is plain, not serrated.

The double bolster, at the front and back of the handle, is what you pay for. It gives the knife real weight and balance in the hand, so it feels like a small chef's knife rather than a table utensil. These are knives for a household that serves steak to guests often and will hone and sharpen them properly.

Skip it unless that describes you. At about $124 a knife, it is a lot to spend on something that shares a drawer with the forks, and the Gourmet set cuts almost as cleanly for a quarter of the price. Hand wash and dry immediately.

The catch. Very expensive for steak knives, and it earns its price only in a house that sharpens them.

Compared.

Every comparison

Serrated or straight

If nobody in the house will sharpen a knife, buy serrated. It stays usable for years and forgives the dishwasher. If someone keeps a honing steel and uses it, buy straight. The cut is cleaner, the meat keeps more of its juice, and the knives can be restored indefinitely.

A wavy edge, like Victorinox's, sits between the two: finer than a saw-toothed serration, and it still needs no sharpening.

Plates are the enemy

China and stoneware are harder than knife steel, and every cut that reaches the plate dulls the edge. That is why steak knives lose their edge faster than kitchen knives cutting on wood. Hone straight-edged steak knives every few uses and have them properly sharpened once or twice a year.

Care

Hand wash and dry wooden-handled and forged knives straight after the meal. Do not leave them soaking. Store them in a tray or block, not loose in a drawer where the edges knock together.

Frequently asked questions

What makes a good steak knife?

An edge that suits how you care for it, serrated if you will never sharpen and straight if you will, stainless steel from a maker that names it, and a blade of about 4 to 4.5 inches. A comfortable handle and clear dishwasher rules matter more than forging for most households.

What is the best steak knife?

For most households, the Victorinox Swiss Classic serrated set, at about $35 for six and dishwasher safe. If you will sharpen them, the straight-edged Wüsthof Gourmet set cuts more cleanly. The forged Wüsthof Classic Ikon is the one to buy if the steak knives are meant to last a lifetime.

Are serrated or straight-edge steak knives better?

Straight edges cut more cleanly and can be sharpened, but need honing. Serrated edges stay usable for years without sharpening. Choose straight if you will sharpen them and serrated if you will not.

Can steak knives go in the dishwasher?

Some can. Victorinox and Zwilling Twin Gourmet are listed as dishwasher safe. Wüsthof recommends hand washing, and Opinel says wooden handles should never go in the dishwasher.

How many steak knives do I need?

One per regular diner plus two for guests. Sets of four and six are common; buying two sets of four in the same line gives eight.

Is a forged steak knife worth it?

Only if you sharpen your knives and value the weight and balance. For most households a stamped knife from the same maker cuts nearly as well for far less.

Can you sharpen serrated steak knives?

With a tapered rod, one scallop at a time, or by a professional. Most people never do, which is why serrated knives suit households that do not sharpen.
